1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

12 oz. skinless link breakfast sausage, chopped
1/2 cup diced onion
6 large eggs
2 cups milk
2 tbsp. corase grain or dijon mustard
1 tbsp. chopped fresh sage or 1/2 tsp. dried rubbed sage
1/4 tsp. kosher salt
black pepper
4 slices rye bread, cut into 1 inch pieces, 1 oz. each
1 1/2 to 2 cups peeled sweet apple, such as honeycrisp, cubed into 1/2 inch pieces
2 cups shredded gruyere, divided, 8 oz

Steps:

  • 1. Preheat oven to 375. Coat a 7 x 11 inch baking dish with nonstick spray.
  • 2. Brown sausage in saute pan over medium high heat til almost fully cooked, 5 minutes. Add onion and saute til softened, 3 minutes. Transfer sausage mixture to paper towel lined plate.
  • 3. Whisk together eggs, milk, mustard, sage and salt. season with pepper.
  • 4. Arrange bread in bottom of prepared baking dish. Top bread with apple and 1 1/2 cups cheese, then add sausage mixture. Pour egg mixture over sausage, taking care it doesn't spill over, then top with remaining 1/2 cup cheese.
  • 5. Bake casserole til cheese is browned and eggs are set in the center and cooked through, about 45 minutes or to 160 degrees. Serves 8

1 yellow bell pepper, cored, seeded, and cut into 1- inch-wide strips

4 scallions, chopped, white and green parts divided
1 red bell pepper, chopped
10 eggs
1 1/4 c. heavy cream
1 tbsp. Dijon mustard
2 tsp. hot sauce, optional
1 1/2 tsp. salt
1 tsp. black pepper
2 c. shredded sharp cheddar cheese, divided (8oz package)
1 30 oz package of frozen, shredded hash browns, thawed

Steps:

  • Grease a 9-by-13-inch (or other 3-quart) baking dish with butter or nonstick spray. Preheat the oven to 350 degrees.
  • Heat a large skillet over medium-high heat. Add the sausage and break up into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Add the red bell pepper and white and light green parts of the scallions and cook 3 more minutes. Transfer to a plate to let cool slightly.
  • Meanwhile, in a large bowl whisk together the eggs, heavy cream, mustard, hot sauce, salt, black pepper and about one-half of the remaining green parts of the scallions (save the rest to sprinkle on top of the casserole once baked.) Let rest 10 minutes, top with the remaining green parts of the scallions, then serve.
