Time 45m

Yield 12

Number Of Ingredients 8

12 whole fresh mushrooms
1 tablespoon vegetable oil
1 tablespoon minced garlic
1 (8 ounce) package cream cheese, softened
¼ cup grated Parmesan cheese
¼ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon ground cayenne pepper

  • Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic. Set aside to cool.
  • When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on prepared cookie sheet.
  • Bake for 20 minutes in the preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

STUFFING STUFFED MUSHROOMS

Stuffing Stuffed Mushrooms image

These are great with almost any kind of stuffing - corn bread, oyster, sausage, you name it. Pour Spanish wine throughout the meal: a chilled white Albariño or a red Rioja.

Yield Makes 6 servings

Number Of Ingredients 9

2 cups leftover stuffing
1 cup grated provolone cheese (about 3 ounces)
1 large egg, lightly beaten
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 cup green onions, chopped
1 tablespoon olive oil (optional)
18 large button mushrooms (about 1 pound), stems removed
Olive oil

Steps:

  • Preheat oven to 400°F. Break up stuffing into bowl. Add 3/4 cup cheese, egg, parsley, basil, and green onions; mix well. If mixture seems dry, add 1 tablespoon olive oil to moisten. Season with salt and pepper.
  • Scoop out center of mushroom caps using small spoon. Fill each mushroom with stuffing; place on rimmed baking sheet. Drizzle with olive oil and sprinkle with remaining 1/4 cup cheese. Bake until stuffing is golden brown on top, about 15 minutes. Serve hot or at room temperature. (Can be made 2 hours ahead. Let stand covered at room temperature.)

Tips:

  • Choose the right mushrooms. Large, firm mushrooms with intact stems are best for stuffing.
  • Prepare the mushrooms properly. Clean the mushrooms with a damp paper towel and remove the stems. You can use a melon baller or a small spoon to scoop out the gills.
  • Use fresh ingredients. Fresh herbs, vegetables, and cheeses will give your stuffed mushrooms the best flavor.
  • Don't overstuff the mushrooms. You want the filling to be evenly distributed and not too packed in.
  • Bake the mushrooms at a high temperature. This will help to brown the mushrooms and give them a crispy texture.
  • Serve the mushrooms immediately. Stuffed mushrooms are best when served hot out of the oven.

Conclusion:

Alouette stuffed mushrooms are a delicious and versatile appetizer or side dish. They are easy to make and can be tailored to your own taste preferences. With a variety of fillings to choose from, there is sure to be a recipe that everyone will enjoy. So next time you are looking for a quick and easy appetizer, give Alouette stuffed mushrooms a try!
