Time 1h40m

Yield 4-6 serving(s)

Number Of Ingredients 13

1/4 cup vegetable oil
1 (3 -3 1/2 lb) chicken, cut up into serving pieces
1 large onion, thinly sliced
1 medium green bell pepper, cut into thin strips
1 medium red bell pepper, cut into thin strips
12 fresh mushrooms, sliced
salt
pepper
1/2 fresh pineapple, peeled, cored, and cut into small chunks
1/4 cup soy sauce
1 tablespoon honey
1/2 cup pineapple juice
1/2 cup semisweet white wine

Steps:

  • In a large skillet, heat oil over medium heat; add the chicken; brown lightly on all sides; transfer chicken to a plate.
  • Add the onion, bell peppers, and mushrooms to the skillet; season with salt and pepper; stir/saute for 5 minutes or until softened; remove pan from heat.
  • Layer half the vegetables and half the pineapple chunks over the bottom of a 2 to 2 1/2 quart lightly greased casserole dish.
  • Arrange chicken pieces over the vegetables and pineapple.
  • In a small bowl, mix together the soy sauce and honey; brush the chicken with this mixture.
  • Layer the remaining vegetables and pineapple over the chicken.
  • Mix the pineapple juice and wine together; pour evenly over the top.
  • Cover and bake in a 350° oven for about 1 hour or until the chicken is tender.

Tips:

  • Use fresh pineapple. Fresh pineapple has a brighter flavor and more nutrients than canned pineapple. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well before using it.
  • Don't overcook the chicken. Chicken is best when it is cooked through but still moist. Overcooked chicken is tough and dry.
  • Use a variety of vegetables. This recipe calls for broccoli, carrots, and celery, but you can use any vegetables you like. Some other good options include bell peppers, onions, and mushrooms.
  • Make sure the rice is cooked through. Rice is cooked through when it is tender and fluffy. If the rice is still hard, cook it for a few more minutes.
  • Serve the casserole hot. This casserole is best served hot out of the oven. You can also reheat it in the microwave or oven.

Conclusion:

Aloha Pineapple Chicken Rice Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. The casserole is packed with flavor from the pineapple, chicken, and vegetables. The rice makes it a hearty and filling meal. This casserole is sure to be a hit with your family and friends.
