6 onions, chopped
2 red bell peppers, seeded and chopped
2 (16 ounce) cans stewed tomatoes, with juice
2 (15.5 ounce) cans kidney beans, with liquid
1 (16 ounce) can tomato sauce
1 (16 ounce) can pineapple chunks, drained
2 tablespoons chili powder
2 teaspoons salt

Steps:

  • Heat a large Dutch oven until hot over high heat. Add the ground beef, and cook until barely pink, stirring constantly to break into small pieces. Stir in onions and bell pepper, cook until the meat has browned, and the onions have softened and turned translucent, about 5 minutes. Pour meat into a large mesh strainer and press to expel excess fat.
  • Place meat back into Dutch oven along with stewed tomatoes, kidney beans, tomato sauce, and pineapple chunks; season with chili powder and salt. Bring to a boil, then reduce heat to medium-low and simmer uncovered for 10 minutes, or until chili reaches desired consistency.

2 chopped onions
1 tablespoon plus 2 teaspoons chili powder
1 tablespoon ground cumin
2 tablespoons unsweetened cocoa powder
3 cloves minced garlic
2 seeded and minced jalapeƱo peppers
2 (15 oz) cans undrained ranch-style beans
1 teaspoon cayenne pepper
1 teaspoon dried oregano
2 (15 oz) cans drained and rinsed black beans
1 (15 oz) can diced tomatoes
4 cups tomato sauce
2 cups beef broth

Steps:

  • In a large Dutch oven over medium-high heat, add the ground beef and cook for 2 minutes. Next, add the onions, chili powder and cumin, and stir together. Such a great recipe. Super quick and easy!! We serve it with Kings Hawaiian Rolls. Also I usually make it the night before and let it sit in the fridge overnight and then reheat in the crock pot before serving. It just tastes better this way. Another twist our family uses for this recipe is we use 1 lb ground beef and then we buy 1 lb of steak and put it through the food processer it gives a more chunky texture to the chili but it is just as delightful using 2 lbs ground beef.
