2 (5 ounce) cans solid white tuna packed in water, drained
1 (10.75 ounce) can condensed cream of chicken soup
½ (10.75 ounce) can milk
1 (4 ounce) packet saltine crackers, crushed
3 slices white bread, crumbled into fine crumbs
½ onion, finely chopped
1 large egg
ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large loaf pan.
  • Mix tuna, cream of chicken soup, milk, cracker crumbs, bread crumbs, onion, egg, and black pepper until thoroughly combined and spoon the mixture into the prepared bread pan. Smooth top.

2 eggs, lightly beaten
3 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon dried parsley
½ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon ground black pepper
1 (5 ounce) can tuna packed in water
1 cup soft bread crumbs
½ cup chopped onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a glass loaf pan with cooking spray.
  • Beat eggs, mayonnaise, horseradish, parsley, paprika, cayenne pepper, and black pepper together in a large bowl until smooth. Add tuna in water, bread crumbs, and onion; mix until evenly moistened. Pack tuna mixture into prepared loaf pan.

I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.

5 can(s) tuna, packed in water, drained
1 1/2 - 2 c ground oatmeal (i used my food processor)
1/2 green pepper, finely chopped
4 stalk(s) celery, finely chopped
6-8 baby carrots, finely chopped
3 eggs
4 Tbsp light cream cheese (i had whipped, so that's what i used)
2 Tbsp minced garlic
1 Tbsp lemon juice
1 Tbsp dill
seasoning (such as mrs. dash)
few turns of fresh ground pepper

Steps:

  • 1. Chop oatmeal in food processor. Set aside. Chop celery, pepper, and carrots.
  • 2. Mix all ingredients together until well blended; shape into loaf. Place in 8x8 baking dish sprayed with cooking spray.
  • 3. Bake at 350 for 30-45 minutes. Let rest 15 minutes before slicing.
  • 4. Serve with tartar sauce or a dill mayo.

1/2 cup breadcrumbs
1/2 cup egg substitute
1/2 cup diced green bell pepper
1/2 cup onion, finely chopped
1/4 cup milk
1/2 teaspoon Worcestershire sauce
salt and pepper
1 dash Tabasco sauce (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
  • Pack ingredients into a large, greased loaf pan.

8 ounces elbow macaroni
2 tablespoons butter
2 large eggs
2 large egg whites
2 tablespoons grated onions
2 (6 ounce) cans solid-pack white tuna in water, drained and flaked
12 pimento stuffed olives, thinly sliced (1/4 cup)
1 cup soft whole wheat bread crumbs (2 slices bread)
1 (12 ounce) can evaporated skim milk
1/2 teaspoon salt
1 teaspoon dry mustard
1 tablespoon prepared horseradish
8 ounces reduced-fat sharp cheddar cheese, grated

Steps:

  • Preheat the oven to 350 degrees.
  • Line a standard-size loaf pan with aluminum foil.
  • Spray the foil-lined pan with non-stick cooking spray and set it aside.
  • Cook the macaroni in a large pot of boiling water according to package directions.
  • Drain it thoroughly and add the butter, stirring until it melts, set aside.
  • Combine the eggs and egg whites in a large bowl and beat them lightly.
  • Add the onion, tuna, olives and bread crumbs and mix well.

3 eggs
1/2 teaspoon dried dill weed

5 cups stuffing cubes or 5 cups dried seasoned bread cubes
1 cup skim milk
2 (12 ounce) cans whie albacore tuna in water, drained
2 tablespoons vegetable oil
paprika
Pam cooking spray

Steps:

  • Beat with mixer in a large bowl, cream cheese, eggs, dried dill weed, salt and pepper.
  • In another bowl, add two cubes dried bread cubes and 1 cup milk. Stir around. Set aside.
  • Add tuna. Break tuna apart with a fork while adding. Mix.
  • Add balance of seasoned bread cubes and the soaked break cubes.
  • Stir with spatula until mixed.
  • Add vegetable oil and mix.
  • Preheat oven 350*.
  • Spray Pam in a large loaf pan.
  • Pour loaf ingredients and smooth out.
  • Sprinkle paprika on the top.
  • Bake 1 hour or until top springs back to the touch.
  • Let cool at least 10-15 minutes.
  • Note: I used my spiced croutons which have chili powder and cumin. and butter. You might like to use thyme or sage along with the dill weed.
  • This keeps well.
  • You may serve with tartar sauce, cream gravy, ketchup, chili sauce or mayo or miracle whip on a sandwich.

2 eggs
1 small onion, chopped
1 large celery, stalk, chopped
1 1/2 cups crackers, coarsely crushed saltine
1/4 teaspoon celery seed

2/3 cup water or 2/3 cup milk
1/8 teaspoon pepper

Steps:

  • Break apart tuna with a fork in a mixing bowl; add remaining ingredients.
  • Mix well; pour into well greased 1-quart casserole.
