TUNA LOAF
I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.

TUNA LOAF
Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

TUNA LOAF
This recipe is from Favorite Recipes of Assemblies of God Woman Meats. Found in Alvera Wise's (my mother-in law) kitchen. I really like this recipe and so easy. I have doubled this and poured it into a standard loaf pan, so I can slice it for sandwiches etc.

Steps:
- Break apart tuna with a fork in a mixing bowl; add remaining ingredients.
- Mix well; pour into well greased 1-quart casserole.
- Cover.
- Bake in 350 degree oven for 40 minutes.
- Uncover; bake for about 20 minutes more or until golden.
- Serve with lemon, mushroom sauce,or a tarter sauce.
Tips:
- Choose the Right Ingredients: Use high-quality canned tuna, mayonnaise, celery, and other ingredients. Fresh herbs and spices can also enhance the flavor.
- Balance the Ingredients: Make sure to use the right proportions of ingredients to achieve a cohesive and flavorful loaf. Don't overpower the tuna with too much mayonnaise or celery.
- Don't Overmix: Mix the ingredients just until they are combined. Overmixing can result in a tough and dense loaf.
- Chill Before Baking: Refrigerate the tuna loaf mixture for at least 30 minutes before baking. This will help it hold its shape and bake evenly.
- Bake at the Right Temperature: Bake the tuna loaf at the recommended temperature in the recipe. Too high a temperature can cause the loaf to dry out, while too low a temperature can prevent it from cooking through.
Conclusion:
Almost tuna loaf is a versatile and delicious dish that can be enjoyed for lunch, dinner, or as a snack.
