STRAWBERRY SHORTBREAD COOKIES

Sparkly Strawberry Shortbread Cookies are pretty in pink with a burst of berry flavor. Sparkling sugar adds a sweet crunch to this fab strawberry cookie!

1 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 tsp vanilla extract (optional)
2 Tbsp freeze dried strawberry powder Note: see instructions in the cook's notes below for making your own.
2 cups all purpose flour
sparkling sugar
1 egg white, beaten. I use a pasteruized egg.

Steps:

  • Line baking sheets with parchment paper.
  • Put the butter, sugar, and extract, if using, in the bowl of a food processor or stand mixer. Sift in the strawberry powder to avoid lumps. Cream well. Make sure your strawberry powder is well incorporated and the mixture is streak free.
  • Add the flour and pulse about 10 times, then run the machine briefly, just until the dough comes together into a lump or lumps. If using a stand mixer, add the flour on low and mix until the dough comes together.
  • Turn the dough out onto a floured surface and finish bringing it together, if necessary, with your hands. When it is smooth with no crumbly spots remaining, form it into a disk. Wrap in plastic and refrigerate until firm, about 2 hours.
  • Preheat oven to 350F
  • Roll out the dough on a lightly floured surface to a 1/4 inch thickness and cut out with a cookie cutter. I used a 2 inch cookie cutter for about 20 cookies. I like to refrigerate the cut cookies for 15-20 minutes before baking.
  • Bake the cookies for 8 to 10 minutes, depending on the thickness of your cookies. I like my shortbread on the softer side, but if you prefer it crunchy, bake a little longer. Don't let them get browned.
  • Cool on the pan for about 15 minutes, until the cookies are firm enough to handle, and then lightly brush the edges with egg white, and roll in sparkling sugar. Let dry before eating. Note: you can also brush the edges and roll in sugar before baking, if you prefer.

We lived near Plant City FL at one time and of course they're well known to be Florida's Strawberry Capital! There is a great Market there which made the most wonderful strawberry cookies you can imagine. After trying so many recipes, I finally managed to put one together that's pretty close. Great cookies, loved by everyone who's close enough to have found the Market!

1 box(es) strawberry cake mix, duncan hines
1 box(es) sugar free strawberry jello, small
8 ounce(s) sugar free cool whip
1 large egg, beaten
1 cup(s) pecans, finely chopped
- powdered sugar

Steps:

  • Stir together the cake mix and the Jello, then add rest of ingredients, except for the powdered sugar. Cover and chill the dough in refrigerator for a couple of hours or over night.
  • Shape dough into walnut sized balls and drop into a shallow bowl of powdered sugar. Roll around gently to coat them, then place on a greased cookie sheet.
  • Bake at 350 degrees for 12 -13 minutes until only lightly browned on bottoms. They will be slightly soft. Remove immediately from cookie sheet, cool and store in cookie tin.

Zest of 1 lemon, in wide strips
2 cups sugar
2 cups chopped hulled strawberries
2 cups fresh lemon juice (from about 10 large lemons)
1/4 teaspoon salt

  • Make the lemon syrup: Bring the lemon zest, 1 1/2 cups sugar and 1 1/2 cups water to a boil in a medium saucepan, stirring, until the sugar dissolves; let cool to room temperature.
