1 ½ cups white sugar
1 teaspoon almond extract
4 cups all-purpose flour
¼ teaspoon salt
1 cup whole almonds

2 large eggs
1 cup canola oil
2 tablespoons almond extract
4-1/2 cups all-purpose flour

FILLING :
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
1 tablespoon almond extract
1/4 cup red raspberry preserves

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in oil and extract. In another bowl, whisk flour, salt and baking powder; gradually beat into creamed mixture., Shape dough into 1-in. balls; press one side into chopped almonds.   • Preheat the oven to 350 degrees. Butter 2 baking pans. In a bowl, mix the flour, baking powder and salt together. In a mixer fitted with a paddle attachment (or using a hand mixer), mix the eggs and sugar until pale yellow and fluffy. With the mixer running, drizzle in the oil, vanilla, almond extract and mix.
