VELOUTE SAUCE

One of the most versatile of the "mother" sauces. Not sure why it fell out of fashion. Take the time and give it a try, you'll love it! I usually serve this over chicken, hence the chicken stock or veggies that have been lightly grilled.

  • If you don't have time to blanch the almonds, you can use almond milk or almond flour instead. Just be sure to adjust the amount of liquid you add to the sauce accordingly.
  • You can use any type of vegetable broth in this recipe, but chicken broth or vegetable broth will give it a more flavorful taste.
  • If you want a thicker sauce, you can add a cornstarch slurry. Just mix together equal parts cornstarch and water until smooth, then whisk it into the simmering sauce until it thickens to your desired consistency.
