Time 4h40m

Yield 8

Number Of Ingredients 6

½ cup butter, melted
1 ½ (4.8 ounce) packages graham crackers, broken into small pieces
½ cup almonds
3 cups semisweet chocolate chips
2 (12 ounce) packages silken tofu, drained
2 tablespoons vanilla extract

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter, graham crackers, and almonds into a food processor. Cover, and pulse until the mixture resembles a coarse crumb. Transfer the crumbs to a 9-inch pie plate, and press into the bottom of the plate to form a crust. Wash and dry the bowl of the food processor; set aside.
  • Bake in the preheated oven until lightly golden, about 15 minutes. Remove from oven, and cool for 15 minutes.
  • Meanwhile, melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Place the chocolate, tofu, and vanilla extract into the cleaned food processor. Blend until smooth, scraping down the sides several times. Pour chocolate mixture into the prepared crust. Chill for 4 hours before serving.

Yield Serves 4

Number Of Ingredients 14

1 12-ounce package firm tofu, drained, patted dry, cut into 1-inch-thick slices
Nonstick vegetable oil spray
1/2 cup grated carrot
1/2 cup thinly sliced green onions
2 teaspoons minced peeled ginger
1 garlic clove, minced
1/2 cup almonds, toasted, finely chopped
1 large egg white, beaten to blend
4 teaspoons soy sauce
1 teaspoon oriental sesame oil
1 teaspoon sesame seeds, toasted
4 sesame seed buns, toasted
4 tomato slices
1 cup alfalfa sprouts

Steps:

  • Wrap tofu in doubled dish towel. Place on work surface. Weigh down with a board topped with food cans or weights for 1 hour. Squeeze towel-wrapped tofu to extract as much liquid as possible from tofu. Transfer tofu to medium bowl. Using fork, mash into small pieces.
  • Spray medium nonstick skillet with nonstick spray; place over medium heat. Add carrot, green onions, ginger and garlic; sauté until slightly softened, about 3 minutes. Cool. Mix carrot mixture, almonds, egg white, soy sauce, sesame oil and sesame seeds into tofu. Season with salt and pepper. Shape mixture into four 1/2-inch-thick patties. (Can be made 4 hours ahead. Cover and chill.)
  • If grilling, spray grill rack with nonstick spray, then prepare barbecue (medium heat). If sautéing, spray large nonstick skillet with nonstick spray and heat over medium heat. Lightly spray patties on both sides with nonstick spray. Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place 1 burger on each bun bottom. Top each with 1 tomato slice, some sprouts and bun top and serve.

Tips:

  • Choose the Right Tofu: For this recipe, it's best to use extra-firm or firm tofu. This type of tofu holds its shape well and won't crumble when you cook it.
  • Press the Tofu Properly: Pressing the tofu removes excess moisture, resulting in a firmer texture and better flavor absorption.
  • Slice the Tofu Uniformly: Consistent slicing ensures even cooking and presentation. Aim for slices that are about ¼-inch thick.
  • Marinate the Tofu: Marinating the tofu in a flavorful mixture of soy sauce, rice vinegar, ginger, and garlic infuses it with delicious taste. Allow the tofu to marinate for at least 30 minutes, or up to overnight.
  • Use a Nonstick Pan: A nonstick pan prevents the tofu from sticking and breaking apart during cooking.
  • Cook the Tofu in Batches: If you're cooking a large amount of tofu, cook it in batches to avoid overcrowding the pan. This helps ensure even cooking and prevents steaming.
  • Don't Overcook the Tofu: Overcooking can make the tofu rubbery. Cook the tofu until it's golden brown and crispy on the outside, but still tender on the inside.

Conclusion:

This recipe for Almond Tofu is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. With its crispy almond coating and tender tofu interior, this dish is sure to impress your taste buds. Feel free to experiment with different marinades and dipping sauces to create your own unique flavor combinations.
