A friend makes something like these and they are addictive. We moved away and I never got her exact recipe, but these are a reasonable facsimile! Sometimes called Christmas Crack or Cracker Toffee - you'll see why!

Provided by Carolyn Haas

Categories     Cookies

Time 25m

Number Of Ingredients 5

1/2 c butter (1 stick)
1/2 c sugar
1 tsp vanilla
1 sleeve club crackers
1/2-1 c almonds, slivered

  • 1. Spread crackers touching each other in a single layer on a rimmed baking sheet. OK to break some in order to completely fill the baking sheet.
  • 2. Melt butter and sugar together in saucepan on medium-high heat until mixture comes to a full-rolling boil. Lower heat to medium and continue to cook for 3 more minutes, stirring occasionally.
  • 3. Remove from heat and stir in vanilla. Stir in almonds. Pour mixture evenly over crackers. Caramel will even out completely as it bakes. Bake at 350 for about 7-8 minutes or until it looks "dry". Check often to make sure that the crackers on the edges don't burn. Cool and break apart.

Tips:

  • Use a food processor to finely grind the toffee and crackers. This will help to create a smooth and even dough.
  • If the dough is too dry, add a little bit of milk or cream until it comes together. If the dough is too wet, add a little bit more flour until it is no longer sticky.
  • Roll the dough out on a lightly floured surface. This will help to prevent it from sticking.
  • Use a sharp knife or cookie cutter to cut out the cookies. This will help to create clean and even edges.
  • Bake the cookies in a preheated oven until they are golden brown. This will help to ensure that they are cooked through.
  • Let the cookies cool completely before storing them. This will help to prevent them from becoming soggy.
