Tips:

  • For crispy and crunchy almond sticks, use blanched almonds. Blanching removes the skins, making the almonds more tender and easier to slice.
  • Use a sharp knife to slice the almonds thinly and evenly. This will help them cook evenly.
  • Don't overcrowd the pan when frying the almonds. This will prevent them from sticking together and cooking evenly.
  • Keep an eye on the almonds while they are frying. They can burn quickly, so it's important to stir them frequently.
  • Once the almonds are golden brown, remove them from the pan and drain them on paper towels. This will help remove excess oil.
  • To make the sugar syrup, use equal parts sugar and water. This will create a syrup that is thick and flavorful.
  • Bring the sugar syrup to a boil, then reduce the heat and simmer for a few minutes. This will help thicken the syrup.
  • Once the syrup is ready, add the fried almonds and stir to coat. Work quickly, as the syrup will start to harden as it cools.
  • Spread the coated almonds on a greased baking sheet and allow them to cool completely. Once they are cool, break them apart and enjoy!
