Yield Makes 6 first-course servings

Number Of Ingredients 5

1 (2- to 2 1/4-lb) butternut squash, peeled, seeded, and cut into 1/2-inch cubes (4 cups)
5 1/2 tablespoons extra-virgin olive oil
3/4 cup whole almonds with skins (3 1/2 oz), very coarsely chopped
2 teaspoons fresh lemon juice
1/2 lb spinach, coarse stems discarded (10 cups)

Steps:

  • Preheat oven to 450°F.
  • Toss squash with 1 1/2 tablespoons oil in a shallow baking pan and spread cubes in 1 layer. Season with salt and pepper and roast in middle of oven, stirring once halfway through roasting, until squash is just tender and pale golden, about 30 minutes total. Cool in pan on a rack until warm, about 15 minutes.
  • While squash is roasting, cook almonds in remaining 4 tablespoons oil in a 10-inch skillet over moderately low heat, stirring constantly, until golden, about 3 minutes, then season with salt and pepper. Pour almonds and oil into a fine-mesh sieve set over a large bowl and cool until warm, about 10 minutes.
  • When almonds and oil have cooled, whisk lemon juice into oil in bowl until combined well, then season with salt and pepper. Add squash, spinach, and half of almonds to dressing and toss gently to coat.
  • Divide salad among 6 salad plates and sprinkle with remaining almonds.

After hunting far and wide for the recipe, I finally found it. Unfortunately, the restaurant closed down but I'll always have the plant-based dressing!

MAPLE ALMOND BUTTER SALAD DRESSING

Maple Almond Butter Salad Dressing image

This is one of the most delicious, addictive things I've ever tasted, and it takes about 5 minutes to make! It doesn't have a traditional dressing consistency (it's more like a dip,) but it is great on salads and with raw snack veggies! The best part is that it is rather strong, so a little goes a much longer way than other dressings!

LITTLE GEMS SALAD WITH GARLICKY ALMOND DRESSING

Little Gems Salad With Garlicky Almond Dressing image

This tart, garlicky dressing is made with toasted almonds and sherry vinegar for a simple but delicious green salad. Little Gem lettuce, a cross between romaine and butter lettuce, has become justly popular for a crunchy salad. Crisp and bright green with small crinkly leaves, it won't immediately wilt when dressed. If unavailable, look for similar small sturdy heads of lettuce or choose hearts of romaine.

Provided by David Tanis

Categories     salads and dressings, vegetables, side dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 6

4 to 6 heads of Little Gem lettuce (more, if very small)
1/4 cup crushed toasted almonds (See Tip)
3 tablespoons sherry vinegar
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Remove wilted exterior leaves from each head of lettuce. Cut stems from the lettuce heads, separate leaves and swish in a large basin of cold water, letting any sand or dirt sink to the bottom. Lift the leaves from the water and transfer to a colander. Shake away excess water. Wrap in kitchen towels to dry or use a salad spinner.
  • Make the dressing: Put almonds, vinegar and garlic in a small bowl. Whisk in the olive oil. Season with salt and pepper.
  • Put leaves in a wide salad bowl. Sprinkle with a pinch of salt. Dress lightly just before serving, using 2 or 3 tablespoons of dressing and coating leaves well. Taste and add more dressing as necessary. Store any remaining dressing in refrigerator for up to 3 days.

Tips:

  • Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the taste of your dressing. Use fresh almonds, lemon juice, and herbs for the best flavor.
  • Adjust the sweetness and acidity to your taste: This recipe is a good starting point, but you can adjust the sweetness and acidity to your liking. Add more honey or maple syrup if you want it sweeter, or add more lemon juice or vinegar if you want it tangier.
  • Let the dressing rest for at least 30 minutes before serving: This will allow the flavors to meld and develop. You can also make the dressing up to 3 days in advance and store it in the refrigerator.
  • Use the dressing on salads, roasted vegetables, or grilled meats: Almond salad dressing is a versatile dressing that can be used on a variety of dishes. It's especially good on salads with hearty greens like kale or spinach, roasted vegetables like Brussels sprouts or broccoli, and grilled meats like chicken or fish.

Conclusion:

Almond salad dressing is a delicious and healthy way to add flavor to your favorite dishes. It's easy to make and can be tailored to your own taste preferences. With its creamy texture, nutty flavor, and hint of sweetness, almond salad dressing is sure to become a new favorite in your kitchen.
