PEACH ALMOND SMOOTHIE

Peach Almond Smoothie image

Peaches and almonds are closely related and make a great match in this not-too-sweet smoothie. Peaches and almonds are closely related botanically, one reason why they have always made a good match in desserts and baked goods. I combined ripe summer peaches with almond milk and soaked almonds here, and also added some almond extract for additional flavor. The smoothie is further enriched with oatmeal, and only slightly sweet. You can add more agave syrup, or honey if you eat honey, if you wish. If delicious fresh peaches are no longer available, use frozen peaches.

Yield Serves 2

Number Of Ingredients 7

1 1/2 cups diced pitted peaches
1 cup nonfat vanilla soy milk
1 cup ice cubes
8 natural almonds with skin, chopped
1 tablespoon honey
1/4 teaspoon almond extract
Chopped almonds (for garnish)

Steps:

  • Combine peaches, soy milk, ice cubes, almonds, honey, and extract in blender. Puree until smooth. Pour smoothie into 2 glasses. Top each smoothie with chopped almonds and serve.

Tips:

  • Select Ripe Peaches: Use ripe, sweet peaches for the best flavor. If fresh peaches are not available, you can use frozen peaches that have been thawed and drained.
  • Use Unsweetened Almond Milk: To keep the smoothie light and healthy, use unsweetened almond milk. You can also use other types of unsweetened milk, such as oat milk or soy milk.
  • Add Protein Powder (Optional): If you want to boost the protein content of the smoothie, add a scoop of your favorite protein powder. Vanilla or unflavored protein powder works well with this recipe.
  • Adjust Sweetness to Taste: If you find that the smoothie is not sweet enough, add a little honey or maple syrup to taste. You can also add a few drops of vanilla extract for extra flavor.
  • Top with Toppings: Before serving, top the smoothie with sliced almonds, chia seeds, or a drizzle of honey for extra flavor and crunch.
