2 c all purpose flour
2 1/2 tsp baking powder
3 Tbsp granulated white sugar
1/2 tsp salt
2 eggs
1 1/2 c milk
2 Tbsp butter, melted
1/2 Tbsp almond extract
1/4 tsp ground cinnamon
1/4 c sliced almonds (to top)
HONEY SYRUP
1/2 c honey
1/4 tsp cinnamon
1/8 tsp nutmeg
pinch ground cloves

Steps:

  • 1. Sift flour, baking powder, sugar and salt. In a separate bowl whisk eggs and milk then add to flour mixture. Mix until smooth and stir in melted butter, almond extract and cinnamon. If batter is still too thick to pour, add a little more milk. Cook pancakes on a hot, greased griddle about 1/4 cup batter per pancake.
  • 2. To make syrup, in a microwave safe bowl heat honey for about 15-20 seconds, so it is just warm and thin in consistency. Stir in cinnamon, nutmeg and cloves. Serve pancakes topped with almonds and drizzled with syrup.
  • 3. The honey syrup recipe is good drizzled over fruit as well. I keep some around almost all the time in my honey bear :p

1/2 c white whole wheat flour
3/4 c whole wheat flour
2 tsp frozen apple juice concentrate
2 tsp baking powder
1/4 tsp sea salt
1 1/2 tsp unsweetened applesauce
1 1/4 c whole milk
1/8 tsp almond extract
3 egg whites
3/4 c fresh blueberries
1 Tbsp slivered almonds , crushed
1 cooking spray, for baking

Steps:

  • 1. In a bowl, mix together the all-purpose flour, whole wheat flour, apple juice concentrate, baking powder, and salt.
  • 2. In a separate bowl, mix the applesauce, milk, almond extract, egg whites, blueberries, and almonds.
  • 3. Add the flour combination. Blend until the batter is smooth.
  • 4. Spray a large skillet or griddle with the nonstick cooking spray and turn stove to medium heat. Pour a small amount of batter on the skillet for each pancake.
  • 5. Turn over once bubbles form on top of the pancakes. Cook each side until golden brown.

Steps:

  • Preheat a non-stick griddle to 375 degrees F (185 degrees C). Lightly grease the cooking surface with butter.

Stir the yogurt, eggs, and butter together in a separate bowl; add to the flour mixture, stirring only until just incorporated. The batter will be thick and airy.
  • Pour about 1/3 cup of the batter onto your preheated cooking surface, leaving space for the pancakes to expand. Cook until dry around the edges and bubbles have formed over the top, 2 to 3 minutes; turn and continue cooking until done in the middle and golden brown, another 1 to 2 minutes.

While I realize that whole wheat is a better choice for diabetics. As an insulin dependent diabetic myself I find this an acceptable recipe for a very occasional pancake urge. Top with a drizzle of no sugar added syrup or my favorite of unsweetened apple sauce.

1 1/4 cups unbleached all-purpose flour
3/4 cup quick-cooking rolled oats
3 tablespoons Splenda sugar substitute (or sugar)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups enriched soymilk, plain or 1 1/2 cups vanilla
about 5 tablespoons almond oil or corn oil, divided
2 large eggs
1/2 teaspoon almond extract
1/2 teaspoon cider or 1/2 teaspoon white wine vinegar
1/2 cup slivered almonds, roasted

Steps:

  • Whisk together flour, oats, Splenda, baking powder and salt in a large bowl.
  • In another bowl, whisk together soy milk, 3 tablespoons oil, eggs, almond extract and vinegar.
  • Add wet ingredients to dry ones and whisk just until mixed.
  • Fold in almonds.
  • Use some remaining oil to lightly grease a large skillet or griddle pan, and heat over medium heat. Ladle 1/4 cup batter for each pancake.
  • Brown each cake on both sides, flipping once, and using more oil as necessary.
  • Serve.

Tips:

  • Use high-quality almond flour. Not all almond flours are created equal. Look for a finely ground, blanched almond flour. This will help ensure your pancakes are light and fluffy.
