4 large eggs, at room temperature

1/4 cup plain whole milk Greek yogurt, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
1 large orange, zested

  • In a separate bowl, whisk together the flours, baking powder, and salt.
  • In batches, stir the dry ingredients into the wet ingredients until just blended. Stir in the almonds. Fill the cups with batter, 1/3 of the way full. Tips:

  • Mise en Place: Before starting, ensure all ingredients are measured and ready. This will make the baking process smoother and more efficient.
  • Fresh Ingredients: Use fresh oranges and lemons for optimal flavor. If using store-bought orange juice, choose 100% pure orange juice without added sugar.
  • Zest Wisely: When zesting oranges or lemons, avoid the white pith as it can add bitterness to the muffins.
  • Orange Prep: If using fresh oranges, remove the zest and juice before slicing them. This will help prevent excess juice from making the batter too wet.
  • Muffin Liners: Use paper muffin liners for easy removal and presentation. Grease the muffin pan or liners lightly if not using liners.
  • Oven Temperature: Preheat the oven to the specified temperature before baking the muffins. This ensures even cooking and prevents the muffins from sinking.
  • Muffin Fillings: Be creative with fillings like chopped nuts, dried fruits, or chocolate chips. Add them to the batter just before baking.
  • Toothpick Test: To check for doneness, insert a toothpick into the center of a muffin. If it comes out clean, the muffins are ready.
  • Cooling and Storage: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Store leftover muffins in an airtight container at room temperature for up to 3 days or in the freezer for up to 2 months.

Experiment with different flavor combinations and fillings to create unique and delightful almond-orange muffins. Whether enjoyed for breakfast, brunch, or as a sweet treat, these muffins offer a perfect balance of citrusy freshness and nutty richness.
