ALMOND MILK

Almond Milk image

It's easy to learn to make almond milk at home with just a few ingredients and minimal effort. Enjoy a glass of it chilled, or use it as a nondairy milk to add to your coffee, cereal and more.

Provided by Food Network Kitchen

Categories     beverage

Time 8h15m

Yield About 2 cups

Number Of Ingredients 2

1 cup raw whole almonds
Pure vanilla extract, honey and/or maple syrup, optional

Steps:

  • Place the almonds in a medium bowl and cover with 2 cups cold water. Cover with plastic wrap and refrigerate until softened and plump, at least 8 hours but preferably overnight.
  • Drain the almonds through a fine-mesh sieve, then rinse well. Reserve the sieve for later. Transfer the almonds to a blender and add 2 cups fresh cold water. Blend on high until very smooth, about 2 minutes. It's okay if the mixture looks slightly grainy.
  • Line the reserved sieve with a clean kitchen towel or cheesecloth and place over a medium bowl. Working in batches, pour the blended almond mixture through the cloth in the sieve, separating the almond milk from any grainy bits. Gather the edges of the towel together and use your hands to squeeze out any remaining milk.
  • Whisk in 1 teaspoon vanilla and/or 1 to 2 tablespoons honey or maple syrup if using to flavor and sweeten the almond milk. Serve immediately or refrigerate in an airtight container for up to 5 days.

ALMOND-MILK GRANITA (GRANITA DI MANDORLE)

Almond-Milk Granita (Granita di Mandorle) image

At Caffè Sicilia, this granita is served for breakfast along with a brioche and a shot of espresso-a wonderful way to start the day. Unlike most other granitas, it has an almost creamy texture. (The Caffè Sicilia almond paste, though pricey, is worth it: Incredibly moist and possessing a delicate floral quality, it tastes so pure that we actually eat it by the spoonful.)

HOMEMADE ICE MILK. -VANILLA, CHOCOLATE, ALMOND, FRUIT CHOICES

Homemade Ice Milk. -Vanilla, Chocolate, Almond, Fruit Choices image

Ice Milk is not ice cream but it will give you the feeling of the frozen treat with far more ease and no machine needed. When it comes out all frozen, let it sit for a few minutes in the sun and then stir it up, it is much more like ice cream at that point. Even better, you can make as much as you want at a time :) For the flavorings, add to your taste, obviously if you choose fresh fruit you may want more than an extract flavoring. Cooking time is actually time to freeze.

  • Mix all ingredients in the bowl. Cover with plastic wrap.
  • Place in the freezer overnight.
  • Next day, let it sit in sun for a few minutes then stir it and you will have ice milk. Until then it just looks like frozen ice lol.

DATE SMOOTHIE WITH BROWN RICE AND ALMOND MILK

Date Smoothie With Brown Rice and Almond Milk image

This is inspired by Bryant Terry's recipe for date-sweetened almond milk, which I came across in his wonderful cookbook "Afro-Vegan." You could use commercial almond milk, but it will taste much richer if you make your own. Blanch and skin almonds (it goes quickly), soak overnight, blend and strain. The smoothie is a simple one, subtly sweetened by the dates, and mildly nutty. If you want to introduce another flavor into the mix add a half banana. I liked it both ways but I think I prefer the simpler version, so I have made the banana optional.

½ teaspoon salt
1 cup blueberries
1 cup applesauce

Tips:

  • Choose the right almonds: For the smoothest almond milk, use blanched almonds. These almonds have had their skins removed, which makes them easier to blend and results in a creamier texture.
  • Soak the almonds: Soaking the almonds overnight or at least for 8 hours softens them and makes them easier to blend. This also helps to release their nutrients and make them more digestible.
  • Use a high-powered blender: A high-powered blender is essential for getting a smooth and creamy almond milk. If you don't have a high-powered blender, you can use a regular blender, but you may need to blend the almonds for longer.
  • Strain the almond milk: After blending the almonds and water, strain the almond milk through a cheesecloth or nut milk bag to remove any solids. This will give you a smooth and creamy almond milk.
  • Sweeten to taste: If you like your almond milk sweetened, you can add a natural sweetener like maple syrup, honey, or stevia. Start with a small amount and add more to taste.
  • Flavor your almond milk: You can flavor your almond milk with a variety of ingredients, such as vanilla extract, cinnamon, nutmeg, or cocoa powder. Add a small amount of your desired flavoring and blend until combined.

Conclusion:

Almond milk is a delicious and nutritious alternative to cow's milk. It is easy to make at home and can be used in a variety of recipes. Whether you are looking for a dairy-free milk option or simply want to try something new, almond milk is a great choice. Experiment with different flavors and recipes to find your perfect almond milk.
