Pinch fine salt
1/4 teaspoon cream of tartar
3/4 cup superfine sugar
1/4 to 1/2 teaspoon pure almond extract

Steps:

Bake until the meringues are no longer glossy and feel light and dry when picked up, about 1 hour. Tips:

  • Use superfine or powdered sugar for the best texture. Regular granulated sugar can also be used, but it will result in a slightly grainier texture.
  • Make sure the egg whites are at room temperature before you start whisking them. This will help them reach their full volume and give the meringues a light and airy texture.
  • Whisk the egg whites gradually, starting on low speed and increasing the speed as the whites begin to foam. This will help prevent them from becoming overbeaten and grainy.
  • Continue whisking the egg whites until they reach stiff peaks. This means that when you lift the whisk out of the bowl, the peaks will hold their shape and not flop over.
  • Fold in the sugar gradually, one tablespoon at a time. This will help prevent the meringues from deflating.
  • Use a piping bag fitted with a star tip to pipe the meringues onto a baking sheet. This will give them a classic meringue shape.
  • Bake the meringues in a preheated oven at 200°F (93°C) for 1-2 hours, or until they are dry and crisp.
  • Let the meringues cool completely on the baking sheet before transferring them to an airtight container.

Conclusion:

Almond meringues are a delicious and elegant dessert that is perfect for any occasion. They are easy to make and can be customized with different flavors and colors. With a little planning and effort, you can create beautiful and delicious almond meringues that will impress your friends and family.
