CHAFFLES WITH ALMOND FLOUR

Chaffles with Almond Flour image

Chaffles are an overnight sensation in the low carb/keto world. Adding almond flour gives them a more traditional waffle texture and helps get rid of any eggy taste. Seriously, try them, they're delicious! I use an inexpensive mini waffle maker (such as Dash® Mini Maker Waffle) which produces perfect 4-inch chaffles. So many ways to use chaffles, the sky's the limit!

ALMOND FLOUR

Almond Flour image

I use almond flour with many of my recipes but it is very costly. I want to experiment with a few inspirations for the holidays therefore decided to make my own almond flour. I had a huge bag that I purchased a while ago to make a nut crunch. I used my food processor but I bet you can do the same with a coffee grinder as well. My advice would be to pulse it because I fear if you over blend you will end up with almond butter. It came out perfectly so now off to cooking land!

ALMOND FLOUR CRAB CAKES WITH LEMON AIOLI

Almond Flour Crab Cakes with Lemon Aioli image

Provided by Catherine Saint Louis

Categories     appetizer

Time 30m

Yield 12 crab cakes

Number Of Ingredients 23

1/3 cup mayonnaise
2 tablespoons Dijon mustard
1 egg
1 egg yolk
2 teaspoons lemon zest
2 teaspoons lemon juice
2 cups ground almond meal, plus 2/3 cup for dredging
4 scallions, finely chopped
1 tablespoon chopped dill
1 tablespoon chopped tarragon
1 tablespoon chopped cilantro
1 pound lump crab meat, picked over
1/2 teaspoon salt
1/4 teaspoon white pepper
1/3 cup yellow cornmeal
1/2 to 3/4 cup canola or grapeseed oil for frying
2 egg yolks
2 teaspoons Dijon mustard
1 clove garlic, crushed
1/2 teaspoon lemon zest
2 teaspoons lemon juice
2/3 to 1 cup grapeseed oil
Salt and pepper to taste

Steps:

  • Make the crab cakes: Whisk together mayonnaise, mustard, egg, egg yolk and lemon zest and juice in a large bowl. Mix in 2 cups of almond meal, scallions and herbs until thoroughly combined. Gently fold in crab. Season with salt and white pepper, cover with plastic wrap and chill for 30 minutes.
  • Meanwhile, make the aioli: Combine egg yolks, mustard, garlic and lemon zest and juice in a blender or food processor and purée until smooth. With machine running, slowly drizzle in the grapeseed oil a few drops at a time until the mixture begins to thicken. Gradually increase the oil to a thin, steady stream, blending to a uniform creamy consistency. If aioli breaks, drizzle in a little lukewarm water a few drops at a time until consistency is reached again. Season with salt and pepper to taste. Will keep 2 days or more in an airtight container in the refrigerator.
  • Mix remaining 2/3 cup almond meal and cornmeal in a pie plate and season lightly with salt and pepper. Divide crab mixture into 12 equal portions and form into 2-inch patties. Coat in almond-cornmeal mixture.
  • Heat 1/4 cup canola or grapeseed oil in a 12-inch skillet over medium-high heat until the oil is hot but not smoking, about 2 minutes. Cook crab cakes in batches, 3 to 4 minutes per side until deep golden brown and crisp, wiping out the skillet and adding fresh oil between the batches. Transfer to a paper-towel-lined tray. Crab cakes can be kept warm in a 200-degree oven for up to 30 minutes.

AMAZING ALMOND FLOUR PANCAKES (GLUTEN-FREE AND PALEO-FRIENDLY)

Amazing Almond Flour Pancakes (Gluten-Free and Paleo-Friendly) image

While trying many of the grain free pancake ideas out there, I discovered that many pancake recipes are just too 'eggy' or include bananas in the recipe. A lot of the recipes resulted in pancakes that were too flat and broke apart when flipping. I wanted a recipe that was like the Aunt Jemima® pancakes I grew up with: delicious and fluffy. After much experimentation with recipes and reading forum comments, I finally put together something reminiscent of childhood quality pancakes. Top with maple syrup and fresh fruit.

These chocolate chip cookies are made with almond flour and are therefore gluten free. However, they taste so good, I would put them up against any cookie recipe out there, and they'd probably win. The texture is slightly crispy on the outside and moist and chewy in the middle. Nobody that I have baked these for has been able to eat just one.

AMAZING COCONUT, ALMOND FLOUR CHOCOLATE CHIP COOKIES

Amazing Coconut, Almond Flour Chocolate Chip Cookies image

I came up with this recipe when I had a sweet tooth that needed tending to, and I wanted to make it a little healthier than your average cookie. So I replaced some of the flour with coconut and almond flour and used 1/2 cup of coconut oil instead of a whole cup of butter. I use all organic ingredients, but that's up to you. This is our family go-to cookie recipe. We've made it so many different ways and loved them all, but our favorites are semisweet chocolate chips with walnuts, or white chocolate chips with macadamia nuts. It's a win-win with these amazing cookies.

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Sift 3 cups almond flour together with baking powder, salt, and baking soda into a bowl and set aside.
  • Mix eggs, sugar, melted butter, Greek yogurt, and vanilla extract together in a bowl with an electric mixer until smooth and creamy. Add flour mixture into the wet ingredients and mix until well combined, but be careful not to overmix.
  • Toss 3/4 cup of the chocolate chips with 1 tablespoon almond flour in a bowl so that the chips are lightly coated. Fold the coated chocolate chips into the batter. Distribute the batter evenly between 10 paper-lined muffin cups, filling the cups all the way to the top. Sprinkle remaining chocolate chips over the tops of the muffins.
  • Bake in a preheated oven for 5 minutes, then reduce heat to 350 degrees F (175 degrees C). Continue baking until the tops are golden and a toothpick inserted into the center of one of the muffins comes out clean, 12 to 15 minutes.
  • Cool muffins in the pan on a wire rack for at least 5 minutes before serving.

Tips for Using Almond Flour in Recipes

  • Measure almond flour correctly: Almond flour is more absorbent than wheat flour, so it's important to measure it correctly. Use a kitchen scale to weigh the almond flour or spoon it into a measuring cup and level it off with a knife.
  • Don't overmix almond flour batter or dough: Overmixing can make almond flour baked goods tough. Mix just until the ingredients are combined.
  • Use a baking sheet lined with parchment paper: This will help prevent the baked goods from sticking to the pan.
  • Bake almond flour baked goods at a slightly lower temperature than wheat flour baked goods: This will help prevent them from drying out.
  • Let almond flour baked goods cool completely before serving: This will help them to set and hold their shape.

Conclusion

Almond flour is a versatile and healthy alternative to wheat flour. It can be used in a variety of recipes, from cookies and cakes to muffins and pancakes. With its nutty flavor and rich texture, almond flour can add a delicious and nutritious boost to your favorite baked goods.
