GLUTEN-FREE CHOCOLATE CHIP COOKIES WITH ALMOND FLOUR

Gluten-Free Chocolate Chip Cookies with Almond Flour image

These chocolate chip cookies are made with almond flour and are therefore gluten free. However, they taste so good, I would put them up against any cookie recipe out there, and they'd probably win. The texture is slightly crispy on the outside and moist and chewy in the middle. Nobody that I have baked these for has been able to eat just one.

ALMOND BUTTER COOKIES (GLUTEN FREE)

Almond Butter Cookies (Gluten Free) image

This recipe can be made with any kind of nut butter. It's not very sweet - peanut butter cookies usually are made with 1 cup pb and 1 cup sugar, so this is only half the amount of sugar. You can add raisins, chocolate chips, craisins, nuts.... whatever floats your boat! For the gluten free flour you can use 1 cup of any gf flour mix. Usually I use rice flour and tapioca starch.

  • Bake until golden brown: The cookies should be baked until they are golden brown around the edges, but still soft in the center.
  • Use a good quality almond extract: Almond extract is what gives these cookies their distinctive flavor, so make sure to use a good quality extract.
  • Experiment with different toppings: You can add different toppings to these cookies before baking, such as sliced almonds, chopped nuts, or dried fruit.
