Steps:
- 1. Preheat oven 325F. Line baking sheet with silicone baking mat or parchment paper. In a small mixing bowl, whisk egg white, salt, vanilla extract and sugar until foamy. Whisk until sugar is completely dissolved. Whisk in flour until no lumps. Then, gently fold in almond slices and butter.
- 2. Spoon 1 to teaspoon of batter onto prepared baking sheet and spread batter into a 2 to 3-inch circle. Make sure the almonds flakes are not overlapping each other. Spoon the rest of the batter on baking sheet with each cookie at least 1-inch apart. Might need to bake cookies in batches.
- 3. Bake 9 to 12 minutes depending on their size, rotate baking sheet once during baking. Bake until slightly golden brown. Remove from baking sheet and cool completely on wire rack. Cookies will crisp up once completely cool.
Tips:
- Use room temperature ingredients. This will help the cookies spread evenly and bake more consistently.
- Don't overmix the dough. Overmixing can make the cookies tough.
- Chill the dough before baking. This will help the cookies keep their shape and prevent them from spreading too much.
- Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool completely before storing them. This will help them keep their shape and prevent them from becoming chewy.
Conclusion:
Almond cookie crisps are a delicious and easy-to-make treat that are perfect for any occasion. With just a few simple ingredients, you can create these crispy, flavorful cookies that are sure to be a hit with everyone. So next time you're looking for a sweet treat, give almond cookie crisps a try. You won't be disappointed!
