CHINESE ALMOND COOKIES
Almond cookies like these are thought to resemble coins, making them particularly popular as a symbol of good fortune during the Chinese New Year. Traditional recipes are made with lard and flavored with almond extract. We used butter and almond flour in these to boost the nutty flavor and create a crumbly texture similar to pecan sandies. Enjoy them year-round, particularly with a cup of tea or coffee.

Steps:
- Sift the all-purpose flour, almond flour, baking soda and salt together into a large bowl. Whisk any bits of almond flour left in the sifter into the sifted flour mixture.
- Combine the butter and sugar together in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, about 4 minutes. Add the almond extract and 1 egg yolk and beat until the mixture is smooth and combined, about 2 minutes. Scrape down the sides and the bottom of the bowl with a rubber spatula. Reduce the speed to medium low, add the flour mixture and beat until no streaks of flour remain, about 2 minutes.
- Wrap the dough in plastic and refrigerate for 1 hour.
- When ready to bake, position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment.
- Whisk together the remaining egg yolk and 1 tablespoon of water in a small bowl. Set aside.
- Scoop the dough by tablespoons (you can use a 1/2-ounce ice cream scoop) and place 2 inches apart on the prepared baking sheet. Roll each scoop into a ball and return it to the baking sheet. Flatten each with your palm into a 2-inch round. Gently press an almond onto each and brush with the egg wash.
- Bake, rotating the baking sheet halfway through, until the cookies are golden brown on the edges, 16 to 18 minutes. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely, about 10 minutes.
- Store the cookies in a tightly sealed container at room temperature for up to 5 days.
CHINESE CHEWS
Steps:
- Preheat oven to 300° F. Grease and flour an 8 x 12-inch pan - if you use a smaller pan, the baking time will be longer. Note: If you grease the pan, but don't flour it, the squares will stick to the pan and be difficult to remove after baking.
- Combine flour, sugar (not confectioners sugar), baking powder and salt. Sift with a sifter or fine mesh sieve into a medium sized mixing bowl. If you don't have a sifter, whisk dry ingredients together well to combine.
- Stir the dates, nuts and well-beaten eggs (I beat the eggs separately with a hand mixer for about 1 minute until fluffy before adding them), into the dry ingredients. It is not necessary to beat the eggs with a mixer, you can beat them by hand with a fork. Make sure ingredients are well combined - the batter will be sticky.
- Spread the batter out as thinly as possible into the prepared pan.
- Bake for 30 minutes, or until top is golden brown and a toothpick inserted in the center of the pan comes out clean.
- Let cool completely, and cut into 1 to 1 1/2-inch squares. Note: Many recipes call for cutting the squares while still warm. In my experience, they are much easier to cut after they've cooled.
- Sprinkle with powdered sugar, using sifter or sieve, as desired. Links: The Hunt for "Chinese Chews" Chinese Chews from She Wears Many Hats
CHINESE ALMOND COOKIES
Each Christmas, my mother baked these Chinese almond cookies and stored them in clean coffee cans. When she passed away, I started giving our kids a can of these sentimental sweets. (Traditional Chinese almond cookies typically use lard, but butter is a great substitute if you don't have lard on hand.) -Jane Garing, Talladega, Alabama

MICROWAVE CHINESE CHEWS
Easy, yummy cookie. I make these for the holiday cookie exchange, but I felt so guilty for making such an easy cookie, I didn't make them one year. The next year I was asked to please make them again, people were asking for them.

CHEWY ALMOND COOKIES
My children and grandchildren adore these old-fashioned cookies, and they make a good unfrosted choice for a holiday cookie plate. But they're wonderful year-round, too—I even keep unbaked dough in my freezer so I can whip up a batch whenever my family comes for a visit. —Betty Speth, Vincennes, Indiana

Tips:
- Mise en Place: Before starting, measure and prepare all ingredients. This will help you stay organized and ensure that you don't miss anything.
- Use Good Quality Almond Flour: The quality of almond flour can greatly impact the texture and flavor of your chews. Choose a finely ground, blanched almond flour for the best results.
- Don't Overmix the Dough: Overmixing can result in tough, chewy chews. Mix the dough just until it comes together.
- Chill the Dough: Chilling the dough helps it to set and makes it easier to handle. If you're short on time, you can skip this step, but chilling the dough will give you a better end result.
- Don't Overcook the Chews: The chews should be slightly soft and chewy, not hard or crispy. Keep a close eye on them while they're baking.
Conclusion:
Almond Chinese chews are a delicious and easy-to-make treat that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a batch of these chewy, nutty cookies that are perfect for a snack or dessert. So next time you're in the mood for something sweet, give this recipe a try. You won't be disappointed!
