APRICOT ALMOND CAKE

This vegan cake tastes like marzipan and looks impressive. But since you use canned fruit, it comes together quickly.

Provided by Jenna Helwig

Time 1h40m

Number Of Ingredients 12

Cooking spray
1 cup all-purpose flour
.5 cup almond flour
.5 cup granulated sugar
1.5 teaspoons baking powder
.5 teaspoon kosher salt
.75 cup unsweetened plain almond milk
1 teaspoon apple cider vinegar
.5 cup olive oil
.5 teaspoon pure almond extract
1 15 oz. can apricot halves in heavy syrup (such as Del Monte), drained
1 tablespoon apricot preserves

Steps:

  • Preheat oven to 350°F. Coat a 9-inch springform pan with cooking spray. (If you don't have a springform pan, spray a 9-inch cake pan with cooking spray and line the bottom with a circle of parchment paper.)
  • Whisk all-purpose flour, almond flour, sugar, baking powder, and salt in a large bowl. Add milk and vinegar; stir to combine. Add oil and almond extract; stir until very well combined, about 60 strokes. Transfer to prepared pan. Note: The gluten in the flour gives this eggless cake structure. Be sure to stir the batter for the full 60 strokes to activate it.
  • Arrange apricot halves, cut side up, on top of cake batter. Bake for 30 minutes. During final 2 minutes of baking time, whisk apricot preserves and 1 teaspoon hot water in a small bowl. Remove cake from oven. Brush cake (not apricot halves) with apricot preserve mixture.
  • Return cake to oven and bake until light golden and a wooden pick in the center comes out clean, 10 to 15 minutes. Transfer pan to a wire rack and let cake cool for 10 minutes. Remove sides of pan and let cake cool completely on wire rack, about 30 minutes

Time 3h20m

Yield 10

Number Of Ingredients 10

1 cup butter
1 ½ cups white sugar
4 eggs, separated
3 cups self-rising flour
1 cup milk
1 teaspoon almond extract
2 cups water
1 cup white sugar
½ cup brandy
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C). Grease and flour an 8 inch round baking pan.
  • Beat the butter and 1 1/2 cups of sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature egg yolks one at a time, allowing each egg yolk to blend into the butter mixture before adding the next. Pour in the flour alternately with the milk, mixing until just incorporated. Stir in the almond extract. Beat egg whites until stiff peaks form in a large glass or metal mixing bowl. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape. Fold the egg whites into the batter; mixing just enough to evenly combine. Pour the batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack. Cut any excess cake so that it is flush with the sides of the pan.
  • Bring the water and 1 cup of sugar to a boil for 8 to 10 minutes. Reduce heat to a simmer, then add brandy and 1 teaspoon vanilla extract. Simmer for 2 to 3 minutes and remove from heat. Allow syrup to cool to room temperature. Prick holes in the cooled cake with a toothpick, then slowly saturate the cake with the brandy syrup.

Yield Serves 8-10

Number Of Ingredients 13

6 tablespoons unsalted butter, plus more for pan
2 1/2 cups blanched sliced almonds (about 10 ounces), divided
1 pound apricots, divided
1/2 teaspoon kosher salt
1 1/2 cups plus 2 tablespoons sugar, divided
3 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour (regular or gluten-free)
1 1/2 teaspoons baking powder
1 teaspoon amaretto (optional)
2 cups heavy cream
Special Equipment
A 9-inch cake pan (preferably light-colored metal)

Steps:

  • Preheat oven to 325°F. Butter cake pan, then line bottom with parchment paper. Butter parchment, then sprinkle evenly with 1/4 cup almonds.
  • Pit and coarsely chop 6 oz. apricots. Pulse salt, 1 1/2 cups sugar, and remaining 2 1/4 cups almonds in a food processor until finely ground. Add eggs, vanilla, 6 Tbsp. butter, and half of the chopped apricots; process until very smooth. Add flour and baking powder; pulse until combined, then fold in remaining chopped apricots. Transfer to prepared pan.
  • Bake cake until golden brown and the center no longer jiggles when shaken, 60-70 minutes. Transfer pan to a wire rack and let cake cool completely.
  • Meanwhile, pit and slice remaining 10 oz. apricots. Toss apricots, amaretto, if using, and remaining 2 Tbsp. sugar in a medium bowl. Let sit at least 10 minutes or up to 1 hour. Using a whisk or an electric mixer on medium-high speed, whip cream to soft peaks in a large bowl.
  • Run a knife around edges of cooled cake and invert onto a platter.
  • Serve with macerated apricots and whipped cream alongside.
  • Do Ahead
  • Cake can be baked 3 days ahead. Cover and chill. Let come to room temperature before serving.

Tips:

  • Use fresh and high-quality ingredients. This will make a big difference in the final flavor of the cake.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, resulting in a lighter and more tender cake.
  • Gradually add the eggs, one at a time, to the creamed butter and sugar. This will help to prevent the batter from curdling.
  • Be careful not to overmix the batter. Overmixing can result in a tough and dense cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • For the apricot brandy sauce, use high-quality apricot preserves and brandy. This will result in a more flavorful sauce.
  • Be careful not to boil the sauce. Boiling can cause the sauce to lose its flavor.
  • Serve the cake warm, with the apricot brandy sauce drizzled on top.

Conclusion:

This almond cake with apricot brandy sauce is a delicious and elegant dessert that is perfect for any occasion. The cake is moist and flavorful, with a delicate almond flavor. The apricot brandy sauce is the perfect complement to the cake, adding a touch of sweetness and tartness. This cake is sure to be a hit with everyone who tries it.
