Tips:

  • Selecting the best broccoli: Choose broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns with yellowing or wilted florets.
  • Preparing the broccoli: To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender-crisp. Immediately transfer the broccoli to a bowl of ice water to stop the cooking process. Drain the broccoli well before using.
  • Slicing the almonds: To thinly slice the almonds, use a sharp knife or a food processor. If using a food processor, pulse the almonds until they are finely chopped but not powdery.
  • Making the dressing: The dressing for this salad is simple and flavorful. Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
  • Assembling the salad: To assemble the salad, combine the blanched broccoli, sliced almonds, dried cranberries, and crumbled bacon in a large bowl. Drizzle with the dressing and toss to coat. Serve immediately or chill for later.
