BLUEBERRY ALMOND COOKIES

Yield 30 cookies

Number Of Ingredients 11

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (1/2 cup) unsalted butter
1 cup sugar
1 egg
1/4 to 1/3 cup whole milk
1 teaspoon almond extract
2 teaspoons lemon zest, about 1 lemon
1/2 cup chopped almonds, toasted
1 cup frozen blueberries, thawed and drained

Steps:

  • In a medium bowl, combine flour, baking powder, and salt. In another medium bowl, cream together the butter and sugar using a hand mixer. Add egg and beat to incorporate. Add milk, almond extract, and lemon zest. Stir the dry ingredients into the wet ingredients. Fold in the almonds, then the blueberries. Chill the dough in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Using two small spoons, dollop mix onto cookie sheets. Bake until golden brown around the edges, about 15 minutes.

Tips:

  • For the best flavor and texture, use fresh, ripe blueberries.
  • To prevent the cookies from spreading too much, chill the dough for at least 30 minutes before baking.
  • If you don't have a cookie scoop, you can use a tablespoon to drop the dough onto the baking sheet.
  • Bake the cookies until they are just set around the edges but still soft in the center. Overbaking will make them dry and crumbly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These almond blueberry cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy, with a sweet and tart flavor that is sure to please everyone. Whether you are looking for a snack, a dessert, or a gift, these cookies are sure to hit the spot. So next time you are in the mood for something sweet, give these almond blueberry cookies a try!
