Quick and easy blueberry almond bread! Throw it together in less then ten minutes and then let the house smell amazing while it bakes away in the oven!

Number Of Ingredients 11

2 cups flour (make sure to level this)
1 pinch salt
1 1/2 tsp baking powder
1 stick melted butter
1 cup granulated sugar (plus a tablespoon or two for the top)
2 large eggs
1 cup Greek plain yogurt (can sub sour cream or regular plain yogurt too!)
1 tsp vanilla extract
1 tsp almond extract
1 cup fresh blueberries (can sub for frozen blueberries too!)
1/4 cup sliced almonds for top (optional)

Steps:

  • Preheat oven to 350°. In a large bowl, beat together melted butter, sugar, yogurt, eggs, and extracts. Mix until smooth and creamy. Slowly add salt, baking powder, and flour. Once everything is combined, fold in blueberries. Spray one 9x5 bread pan with non-stick spray and pour batter into pan. Top batter with sliced almonds and evenly sprinkle extra sugar over top. Place in oven on middle rack for about 45 minutes or until knife comes out clean when placed in the center. Let cool and serve. Enjoy warm or cold!

1 package (14.1 ounces) refrigerated pie pastry
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1/4 teaspoon almond extract
2 cups fresh blueberries
2 cups fresh raspberries
1/4 cup sliced almonds, toasted
Additional confectioners' sugar, optional

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unroll pastry sheets. Roll dough to 1/8-inch thickness. Cut each with a floured 3-in. cookie cutter to make eight circles or other shapes. Transfer to ungreased baking sheets; prick holes in pastries with a fork., Bake 8-10 minutes or until golden brown. Remove from pans to wire racks to cool completely., Meanwhile, in a small bowl, mix cream cheese, confectioners' sugar and almond extract until blended. Spread over cooled pastries. Top with berries, pressing lightly to adhere. Sprinkle with almonds and, if desired, confectioners' sugar. Refrigerate leftovers.

1/4 cup butter (softened)
1 cup granulated sugar
3 eggs
3 cups flour (set aside 1 Tablespoon)
1 tablespoon baking powder, plus
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup milk
1 1/2 cups fresh blueberries

Steps:

  • Combine almond paste and butter in a large mixing bowl; beat until well blended.
  • Gradually add sugar, beating until light and fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Combine flour, baking powder and salt. Add mixture to creamed mixture alternately with milk, beginning and ending with four mixture.
  • Combine blueberries and 1 Tablespoon flour, toss gently.
  • Spoon one-third of batter into a greased and floured 9 x 5 x 3 loaf pan, and sprinkle with half of the dredged blueberries. Repeat layers once; spoon remaining third of batter on top and smooth with a spatula.
