ALMOND BARK POPCORN

I discovered this little treat by accident while covering pretzels. I got frustrated with that tedious process, but didn't want to waste the almond bark, so I poured it over a batch of popcorn. Now I don't do pretzels anymore.

Time 52m

Yield 8

Number Of Ingredients 3

2 tablespoons vegetable oil
½ cup unpopped popcorn
½ (8 ounce) package almond bark

Steps:

  • Heat 2 tablespoons oil in a large saucepan over medium-high heat. Put 4 popcorn kernels into the oil and cover until popped; add remaining kernels to the saucepan in an even layer. Cover and remove from heat, about 30 seconds. Return to heat and gently shake pan back and forth over the burner until popping slows to several seconds between pops, 1 to 2 minutes.
  • Spread popcorn out onto a few sheets of waxed paper.
  • Place almond bark in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until bark is melted, about 5 minutes.
  • Drizzle the melted almond bark over the popcorn; mix to coat evenly. Let bark dry, about 30 minutes.

Time 15m

Yield 20 cups, 20 serving(s)

Number Of Ingredients 5

16 cups popped popcorn (microwave works fine)
3 cups rice, krispies
2 cups dry roasted peanuts
1 1/2 lbs almond bark
3 tablespoons peanut butter, the cheap does not work as well (chunky ir smooth)

Steps:

  • Melt the peanut butter and almond bark together in the microwave or on low on the stove.
  • Dump the popped popcorn, peanuts, rice krispies and peanuts together in a large bowl.
  • Pour the almond bark/peanut butter mixture over and mix well.
  • Lay out on a grease cookie sheet.
  • Let harden.
  • Put in zip lock bags.
  • I'm guessing on servings; I'd say 16-20.

Tips:

  • Use fresh popcorn for the best results. Stale popcorn will not hold the almond bark coating as well.
  • Make sure the almond bark is melted smoothly before adding the popcorn. If the almond bark is too thick, it will be difficult to coat the popcorn evenly.
  • If you want a thicker coating of almond bark on your popcorn, dip each piece individually. This will take more time, but it will give you a more even and consistent coating.
  • Be careful not to overheat the almond bark. If the almond bark gets too hot, it will burn and become bitter.
  • Store the almond bark popcorn in an airtight container at room temperature. It will keep for up to 2 weeks.

Conclusion:

Almond bark popcorn is a delicious and easy-to-make snack that is perfect for any occasion. It is a great way to use up leftover popcorn, and it is also a fun and festive treat to make with kids. With a few simple ingredients and a little bit of time, you can make a batch of almond bark popcorn that everyone will love.
