Steps:

1 cup canola oil
6 large eggs, room temperature, divided use

4 cups finely chopped pecans, divided
2/3 cup apricot preserves
ICING:
2 cups confectioners' sugar
3 to 5 tablespoons water

Steps:

  • Preheat oven to 350°. In a large bowl, beat cake mix, flour, oil, 4 eggs, cinnamon and ginger until well blended., In a shallow bowl, whisk water and remaining eggs. ⅓ cup unsifted powdered sugar
1 teaspoon vanilla extract
