ALMESAN - VEGAN PARMESAN

Almesan - Vegan Parmesan image

From Veganomicon - The Ultimate Vegan Cookbook. Many vegetarians who decide to take the leap to VEGANISM, find it hardest to give up cheese. While I feel that most the FAKE cheese products out there are trying to mimic something that they just CAN'T, this version of grated parmesan comes pretty darn close to that nutty, salty topping that grated parmesan or other hard cheeses gives to a dish of pasta! This recipe is great too, because you can make it in seconds right in you kitchen instead of shelling out 3 times as much for the pre-made vegan grated cheese they sell in the store. The original recipe calls for 1/8 tsp salt, I use closer to 1/4. Use your taste.

VEGAN "GRATED" PARMESAN CHEESE

Vegan

Almonds and nutritional yeast blend together to replace aged Italian cheese for those who don't want to eat real cheese. The taste is so similar when used in pesto or on top of pasta, it is hard to tell the difference. Try on top of popcorn too. This combination is chock-full-of nutrients too!

MY VEGAN PARMESAN

My Vegan Parmesan image

I always have a batch of this on hand to sprinkle over pasta dishes. Great over red sauce or creamy white sauces too. This recipe has its roots in Recipe #283639, but then I kept tweaking it until it became what you see below! I actually use my (clean) coffee grinder for this because the oil from the almonds sometimes makes them get stuck in the bottom crevice of my blender!! I have made this without the lemon zest as well, and it turns out just as good :)

VEGAN PARMESAN

Vegan Parmesan image

After finding that nowhere in New Zealand has vegan parmesan in stock I decided to make my own and it tastes great! Just only use when serving or for ingredients. If it's left on a moist dish as a garnish it tends to make the yeast soggy.

Provided by Princapessa

Categories     Vegan

Yield 1 1/2 cups

Number Of Ingredients 3

1 cup nutritional yeast (available at natural food stores)
1/2 cup whole almond
1/2 teaspoon salt

Steps:

  • Grind the almonds into a fine powder using a coffee, nut, or spice grinder (a food processor works, but it takes longer. A hand blender does not work for grinding almonds.).

Nutrition Facts : Calories 653.1, Fat 30, SaturatedFat 2.6, Sodium 839.6, Carbohydrate 58.3, Fiber 32.5, Sugar 2.3, Protein 59.2

Tips:

  • Use a food processor or high-powered blender to get a fine, powdery texture.
  • For a nuttier flavor, toast the nuts before blending.
  • Add nutritional yeast for a cheesy flavor and extra protein.
  • Use a variety of nuts and seeds for a more complex flavor.
  • Store almesan in an airtight container in the refrigerator for up to 2 months.

Conclusion:

Almesan is a delicious and versatile vegan alternative to parmesan cheese. It can be used in a variety of dishes, from pasta to pizza to salads. It is also a great source of protein, fiber, and healthy fats. With a few simple ingredients and a few minutes of your time, you can make your own almesan at home. So next time you're looking for a cheesy topping or ingredient, reach for almesan instead of parmesan. Your taste buds will thank you!
