STRAWBERRY AND SPINACH SALAD WITH HONEY BALSAMIC VINAIGRETTE

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette image

This is a great easy summer salad, with a lot of options as to mixing and matching. Plus the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix, blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional but a pecan or roasted almond adds a little crunch and more protein!

SPINACH SALAD WITH STRAWBERRIES

Spinach Salad with Strawberries image

Provided by Food Network

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 17

1 cup pecans
1 egg white
3/4 teaspoon vanilla
1 cup sugar
1 tablespoon water
1 cup salad oil
1/3 cup cider vinegar
1/4 cup sugar
1 tablespoon poppy seeds
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed
2 tablespoons corn syrup
6 cups fresh spinach, washed and dried
2 cups strawberries, sliced (or any fruit desired for color)
3/4 cup red onion, thinly sliced
1 cup fresh mushrooms, sliced

Steps:

  • Make spiced pecans. Beat egg white until very frothy, but not stiff. Add remaining ingredients, excluding pecans. Now add pecans and mix to coat. Spread pecans on baking sheet in single layer and bake in a preheated 200 degree oven for 45 minutes, turning every 15 minutes.
  • For dressing, shake together all ingredients. Toss together salad ingredients. Toss dressing with salad just before serving, sprinkle dressed salad with pecans.

Tips:

  • Choose fresh, ripe strawberries for the best flavor and texture.
  • Use young, tender spinach leaves for a more delicate salad.
  • To save time, use pre-sliced almonds or walnuts.
  • If you don't have any poppy seeds, you can substitute sesame seeds or chia seeds.
  • For a sweeter salad, add a drizzle of honey or maple syrup to the dressing.
  • For a more savory salad, add a sprinkle of crumbled bacon or goat cheese.
  • Serve the salad immediately after making it, as the strawberries will start to wilt if they sit for too long.

Conclusion:

This strawberry spinach salad is a delicious and refreshing way to enjoy fresh, seasonal produce. It's perfect for a light lunch or dinner, and it's also great for potlucks and picnics. With its sweet strawberries, tangy spinach, and crunchy almonds, this salad is sure to be a hit with everyone who tries it.
