THE BEST GLAZED MEATLOAF

Time 1h15m

Number Of Ingredients 14

1 cup crushed saltines (25-30 crackers)
1/3 cup milk
1/4 to 1/2 cup minced fresh parsley
2 large eggs (lightly beaten)
2 teaspoons onion powder (see note to use fresh onions)
3 garlic cloves (finely minced or 1 teaspoon garlic powder)
1 tablespoon Dijon mustard
3 tablespoons Worcestershire sauce
1 1/2 teaspoons salt (I use coarse, kosher salt - use slightly less for table salt)
1/2 teaspoon black pepper (I use coarse black pepper - use slightly less for finely ground)
2 pounds ground meat (I use half ground beef/half ground pork - see note)
2/3 cup ketchup or BBQ sauce (or a combination)
2 tablespoons brown sugar
2 tablespoons apple cider or red wine vinegar

Steps:

  • For the meatloaf, in a large mixing bowl, add the crushed saltines and milk and let the mixture sit for 5-10 minutes. Add the parsley, eggs, onion powder, garlic, Dijon mustard, Worcestershire sauce, salt and pepper. Mix well.
  • Add the ground meat and mix until evenly and well combined. (You can use a food processor for all of the above if you want a an even more well combined spice and meat mixture.)
  • For the glaze, combine the ketchup (or BBQ sauce), brown sugar, and vinegar and whisk to combine.
  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and lightly grease with cooking spray.
  • Pile the meat mixture in the middle of the prepared pan and shape into a loaf about 9 inches long and 4 inches wide (it doesn't have to be perfect; just try to get it an even thickness throughout).
  • Spoon the glaze over the meatloaf. Bake for 45-50 minutes until an instant-read thermometer registers 160 degrees F in the center of the meatloaf.
  • Loosely tent with foil and let the meatloaf rest for 10-15 minutes before slicing and serving.

TOPPING & LOAF (Divided -1/3 for loaf, rest for topping)
1/2 cup ketchup
1/3 cup brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard
MEATLOAF
2 pounds lean ground beef
3 slices bread, shredded *SUB
1/4 cup diced onion
1 egg, beaten
1 cube beef bouillon, crumbled
3 tablespoons lemon juice
*SUB breadcrumbs or oats (3/4 or 1 cup) for bread
HELPFUL TIPS AFTER READING ALL THE REVIEWS: The idea of putting 2 pieces of bread on the bottom of the pan before cooking to soak up the grease is GOD SEND! Works like a charm, and you can remove it when you slice everyone their piece. BUT I also take it out at the 1hr mark and drain the excess liquid. I double the sauce, but only to drizzle on top of everyone's slice. When I do double the topping, I add 1T lemon juice OR 1T balsamic vinegar for yummiest topping!
Substitute bread for 3/4C oats & use green onions instead of onions if you've got picky eaters. Sometimes I dice green peppers too for more flavor.
If you haven't tried "Honey Roasted Red Potatoes" I'd recommend. This meatloaf was liked by everyone over the two other top rated ones on this site!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth. (DIVIDED BET. Tips:

  • Choose the right ground beef: For the best flavor and texture, use a combination of ground chuck and ground sirloin. You can also use ground turkey or chicken, but the flavor will be different.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Just mix the ingredients until they are well combined.
  • Use a loaf pan with a slightly rounded bottom: This will help the meatloaf cook evenly and prevent it from sticking to the pan.
  • Glaze the meatloaf halfway through cooking: This will help to keep it moist and flavorful.
  • Let the meatloaf rest before slicing: This will help to keep the juices in the meatloaf and prevent it from falling apart.
