Time 1h

Yield 6 servings (2 dozen hushpuppies)

Number Of Ingredients 9

3 cups cornmeal
1 cup self-rising flour
1/2 cup sugar
2 tablespoons dried onions
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 to 1 cup hot water
Oil, for frying

Steps:

  • Combine the cornmeal, flour, sugar, dried onions, baking powder, salt and pepper in a large bowl and mix. Next, add the hot water slowly until the mixture begins to thicken. The batter should be thick and start to rise quickly. Continue to mix and knead until the batter stops rising. Once the batter is thick enough, let it stand for 30 minutes before cooking.
  • When ready to cook, add enough oil to a frying pan for the hushpuppies to be submerged. Heat over high heat to 350 degrees F. Use a spoon to carefully drop the batter into the oil. Make sure to spread them apart so they do not stick together. Fry until golden brown on all sides. (The hushpuppies will rise to the top of the oil, so make sure to turn them in the oil on all sides so they cook evenly.) Repeat with the remaining batter.

ALMOST-FAMOUS HUSHPUPPIES

Almost-Famous Hushpuppies image

Ironically, one of the most popular dishes at the seafood chain Long John Silver's is a landlubber one: hushpuppies. The deep-fried cornmeal snacks gained a cult following soon after they debuted in 1977, and although two pups still come with every entrée, many diners end up ordering more on the side to get their fill. The recipe is a secret, but Food Network Kitchens created a perfect copy so you can make them at home. Beware: This recipe makes 30. Try not to eat them all at once.

Time 1h

Yield About 30 hushpuppies

Number Of Ingredients 10

1/3 cup minced onion
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 teaspoon baking powder
1 1/2 teaspoons kosher salt, plus more for sprinkling
1 1/2 teaspoons sugar
2 teaspoons onion powder
1 large egg
1 cup whole milk
Vegetable oil, for frying

Steps:

  • Combine the onion, flour, cornmeal, baking powder, salt, sugar and onion powder in a bowl. Whisk the egg and milk in another bowl. Whisk the egg mixture into the flour mixture until smooth. Cover and chill 30 minutes.
  • Heat 2 inches vegetable oil in a large pot over medium heat until a deep-fry thermometer registers 350 degrees F. Working in batches, carefully drop heaping tablespoonfuls of batter into the hot oil. Fry, stirring occasionally, until golden, about 8 minutes per batch (return the oil to 350 degrees F between batches). Transfer to a paper towel-lined baking sheet using a slotted spoon. Sprinkle with salt. Let rest a few minutes before serving.

ALLIGATOR ALLEMOND

Categories     main-dish

Time 2h45m

Yield 6 servings

Number Of Ingredients 12

2 pounds alligator fillet, cut into 1-inch pieces
1 tablespoon granulated garlic
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 cup plus 3 tablespoons canola oil
2 cups all-purpose flour
2 yellow onions, diced
2 cloves garlic, minced
1 green bell pepper, diced
One 10-ounce can diced tomatoes with green chiles
Steamed rice, for serving

Steps:

  • Place the alligator meat into a large bowl and add the granulated garlic, salt, black pepper and cayenne pepper. Toss the meat with the seasoning and allow to marinate for up to 45 minutes in the refrigerator.
  • In a medium cast-iron pan over medium heat, add 1 cup of the oil and heat through. Whisk in the flour and cook the roux slowly until it reaches a deep chocolate-brown color, 40 to 45 minutes. Remove the roux from the heat and pour into a separate heatproof container to stop the cooking process. Use immediately or cover and refrigerate until ready to use.
  • In a cast-iron pot over medium heat, add the remaining 3 tablespoons of oil and heat until hot. Add the onions, garlic and bell peppers to the pot. Cook until the vegetables begin to soften, 8 to 10 minutes. Add the tomatoes with green chiles, the marinated alligator meat and 1 tablespoon of the roux. Let the meat begin to brown on all sides, about 10 minutes. Add 2 cups of water, bring to a simmer and cook until the meat is cooked through and the sauce thickens slightly, about 45 minutes. Serve over rice.

Tips:

  • Ensure Alligator Meat is Well-Cleaned: Thoroughly clean the meat to remove any dirt or debris. This ensures your hushpuppies are free from impurities and maintain a pleasant taste.
  • Use Fresh Ingredients: Opt for fresh vegetables, herbs, and spices to elevate the flavor of your hushpuppies. Fresh ingredients provide a vibrant taste and aroma, enhancing the overall appeal of the dish.
  • Achieve the Right Consistency: Properly mix the batter to achieve a smooth and slightly thick consistency. The batter should coat the back of a spoon without being too runny or too thick.
  • Monitor Frying Temperature: Maintain the correct oil temperature for frying. Use a thermometer to ensure the oil is between 350°F and 375°F. This prevents the hushpuppies from absorbing too much oil and helps them cook evenly.
  • Avoid Overcrowding: When frying the hushpuppies, avoid overcrowding the pan. Leave sufficient space between each hushpuppy to allow even cooking and prevent clumping.
  • Season Wisely: Taste the hushpuppies before adding additional salt or seasonings. The alligator meat and vegetables already contribute flavor, so adjust the seasoning accordingly to avoid overpowering the taste.

Conclusion:

Alligator hushpuppies are a unique and delectable treat that combines the flavors of alligator meat, vegetables, and spices. By following these tips, you can create delicious hushpuppies that are crispy on the outside and tender on the inside. Whether you're enjoying them as an appetizer, side dish, or main course, alligator hushpuppies are sure to impress your family and friends.
