2 cloves garlic, (finely chopped)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/2 teaspoon dried red chili flakes, (add more or less depending on your heat/spice tolerance))
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons tomato paste
1 tablespoon brown sugar, (optional (only add if you like a sweeter sauce))
3 ounces sun dried tomatoes, (roughly chopped)
1 tablespoon chopped fresh parsley, (for garnish)

Steps:

  • Add the olive oil and garlic to a skillet and cook the garlic over medium heat for 2 minutes.
  • Add the remaining ingredients (except the fresh chopped parsley) and stir into the garlic and oil mixture. Stir continuously for 3 minutes so that the herbs do not burn.
  • Remove from heat. Continue to stir for 1 more minute.
  • Serve immediately or allow to cool and store in a clean mason jar in the refrigerator for up to 2 weeks.

1 tablespoon olive oil
4 large garlic cloves, finely chopped
1 cup chopped drained oil-packed sun-dried tomatoes
1 cup whipping cream
1 7.25-ounce jar roasted red peppers, drained, chopped
1/2 teaspoon dried crushed red pepper
1 cup chopped fresh basil leaves
1 pound penne pasta
1 cup freshly grated Parmesan cheese

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add garlic; sauté 1 minute. Add tomatoes, cream, red peppers and crushed red pepper; simmer over medium heat 2 minutes. Stir in 1/2 cup basil and simmer 1 minute longer.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 3/4 cup pasta cooking liquid. Return pasta to pot. Add sauce, cheese and 1/2 cup basil and toss to coat. Add enough reserved cooking liquid to pasta to moisten if dry. Season with salt and pepper.

8 ounces penne
1 tablespoon olive oil
2 smoked andouille sausage links, thinly sliced
2 tablespoons chopped fresh parsley leaves
2 tablespoons unsalted butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
1/3 cup julienned sun dried tomatoes in olive oil, drained
1/4 cup freshly grated Parmesan
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon red pepper flakes, or more, to taste
Kosher salt and freshly ground black pepper, to taste

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes; set aside. To make the cream sauce, melt butter in a large skillet over medium heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and cook, whisking constantly, until incorporated, about 1-2 minutes. Stir in heavy cream, sun dried tomatoes, Parmesan, oregano, basil and red pepper flakes until slightly thickened, about 1 minute. Season with salt and pepper, to taste. Stir in pasta and sausage until well combined, about 1-2 minutes. Serve immediately, garnished with parsley, if desired.

This is an adopted recipe. I am always on the lookout for freezer recipes so that's why I chose to add this one to my collection. Orignal introduction; "I discovered this recipe in a German home and living magazine as a pizza sauce. But I did have some leftover and soon discovered that you can easily use it as a basic pasta sauce or even as tomato soup adding a bit of cream. It freezes well, so feel free to multiply the ingredients. I usually pack a couple of jars when we go on vacation, so I don't have to fuss too much about dinner. These are the original ingredients, but I usually add more garlic and sun-dried tomatoes if they are easily available. In summer I add fresh basil."

1 cup heavy cream
3 tablespoons butter
½ cup shredded mozzarella cheese

Try it on pasta (I suggest about 1/2 cup per 4 ounces pasta) with parmesan cheese or crumbled feta or toss with beans. It would also make a terrific pizza sauce. 4 cups sun-dried tomatoes, dry packed (about 14 ounces)
6 cups water
1/4 cup extra virgin olive oil
3 cups onions, diced
1/2 cup carrot, peeled and grated
6 garlic cloves
1 cinnamon stick, 2 inches, 2 pinches cinnamon
1 strip orange peel, 1/2 inch by 3 inches, pith removed
1/2 teaspoon black pepper
1 teaspoon cayenne pepper
2 teaspoons sea salt, plus more to taste
6 cups water
2 -3 tablespoons fresh basil, chopped
1 tablespoon balsamic vinegar

Steps:

  • Bring 6 cups of water to a boil in a 3-quart sauce pan. Add the tomatoes and simmer for 2-3 minutes. Remove pan from heat and set aside.
  • In another 3-quart saucepan, soften the onions in the oil over medium heat for 5-7 minutes, then add carrots, garlic, cinnamon, orange peel, black pepper, cayenne and salt.
  • Reduce heat to low, cover the pan, and simmer for 20 minutes.
  • Drain tomatoes and add them to the onion mixture along with 6 cups of fresh water. Raise heat to high and bring sauce to a boil.
  • Reduce heat to low and simmer, uncovered, for 10 minutes.
  • Remove cinnamon stick (if using) and orange peel. Add the basil and balsamic vinegar.
  • Carefully puree the sauce in batches in a blender until smooth. Season with additional sea salt to taste.
