VANILLA WACKY CAKE

Vanilla Wacky Cake image

The "wacky" in the title refers to breaking all the rules of baking. Born out of necessity during the Great Depression, this cake swaps out the expected milk, butter and eggs-which were expensive and hard to find at the time-for water, oil and vinegar. And, yet, through some smart kitchen science, the cake still comes out fluffy, light and not a bit dry. You can mix up the batter right in the baking pan (no bowl required!) with ingredients you probably already have in your pantry. This is a vintage hack that feels like a new classic.

Yield 9 servings

Number Of Ingredients 8

1/3 cup vegetable oil, plus more for greasing the pan
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 tablespoons white vinegar
2 teaspoons pure vanilla extract
2 cups frosting or whipped cream, for serving

Steps:

  • Position an oven rack in the middle of the oven and preheat to 350 degrees F. Grease an 8-by-8-inch baking pan with vegetable oil.

Add the oil, vinegar, vanilla and 1 cup water; stir with the fork until fully incorporated. Bake until a toothpick inserted into the center comes out clean, about 35 minutes.
  • Let the cake cool completely in the pan on a wire rack, about 1 hour. Frost the top of the cake with the frosting, if using. Cut into 9 squares and serve each with a dollop of whipped cream, if using.

SUSAN'S FAVOURITE ONE BOWL CAKE, AKA WACKY CAKE

Susan's Favourite One Bowl Cake, Aka Wacky Cake image

My sister sent me this recipe. Some years ago I had asked her if she still had the recipe for WACKY CAKE that she used to make when I was a little girl. She said that she didn't but then she came across this recipe that she had found in the local newspaper and because it was so similar, she decided to send it to me. This recipe was entered by Brenna Ekstand from Rosetown, Sask. into a recipe contest sponsored by Fry's Cocoa. She found it in her grandmother's handwritten collection.

MADE-IN-THE-PAN CHOCOLATE CAKE

Made-in-the-Pan Chocolate Cake image

This surprisingly tender vegan chocolate cake is made entirely in an 8-by-8-inch baking pan: Just toss in the ingredients, stir until you don't see any flour streaks, then bake. For flourish, add a small handful of chocolate chips before baking or sprinkle the finished cake with a little confectioners' sugar. Adapted from Mollie Katzen's "Honest Pretzels: And 64 Other Amazing Recipes for Kids Who Love to Cook," this recipe was developed for kids, but adults love it, too. It's an ideal snacking cake, or you could gussy it up with a simple ganache frosting.

Time 45m

Yield 9 to 12 servings

Number Of Ingredients 10

1 1/4 cups/160 grams all-purpose flour
1 cup/200 grams granulated sugar
1/3 cup/30 grams unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/3 cup/80 milliliters canola oil
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar or white vinegar
2 tablespoons semisweet or vegan chocolate chips (optional)
Confectioners' sugar, for dusting on top (optional)

Steps:

  • Heat oven to 325 degrees. Add the flour, sugar, cocoa powder, baking soda and salt to an 8-by-8-inch square glass or metal baking dish. Whisk the mixture together until uniform in color. Use your fingers to break apart any lumps.
  • Add 1 cup water along with the oil, vanilla extract and vinegar. Stir slowly with a fork or a whisk in small circles to blend. Mash, scrape and stir with a fork and spoon until the mixture becomes a smooth and uniform batter.
  • Scrape the sides of the baking dish with a rubber spatula and spread the batter in an even layer. Sprinkle with chocolate chips, if using.
  • Use a damp paper towel to wipe the edges of the baking dish clean. Carefully transfer the dish to the oven and bake until a toothpick inserted into the center of the batter comes out mostly clean, 28 to 33 minutes. (Instead of looking like you dipped the toothpick in chocolate frosting, it should look like it has some chocolate cake crumbs clinging to it.)
  • Remove from the oven, let cool, then cut the cake into squares. If you're feeling fancy, this tastes good (and looks pretty) with some confectioners' sugar dusted on top.

Tips:

  • Prepare the pan properly: Grease and flour the baking pan thoroughly to prevent the cake from sticking. This will ensure that the cake comes out cleanly and easily.
  • Use the right ingredients: Make sure to use fresh, high-quality ingredients for the best results. This will help to ensure that the cake has a delicious flavor and texture.
  • Follow the recipe carefully: Don't skip any steps or ingredients, and make sure to follow the recipe's instructions precisely. This will help to ensure that the cake turns out perfectly.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Bake the cake at the right temperature: Make sure to preheat the oven to the correct temperature before baking the cake. This will help to ensure that the cake bakes evenly and correctly.
  • Check the cake for doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter or crumbs attached, the cake needs to bake for a few more minutes.
  • Let the cake cool before serving: Allow the cake to cool completely before serving. This will help to prevent the cake from falling apart.
