EASY TEXAS NO BEAN CHILI

- Brown beef: In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with a ½ teaspoon of salt and a ¼ teaspoon of pepper. Use a spatula to flip the beef over and use the back of a wooden spoon to break up the beef into large crumbles. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes. Use a large slotted spoon to transfer the beef to a plate or bowl. Drain off all but 1 tablespoon of oil from the pan, or if the pan seems dry, add a splash of oil (SEE NOTES).
- Sauté vegetables: Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
- Add the liquids: Add in the beer (or broth), using the back of a spoon to scrape of any brown bits stuck on the bottom of the pan. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
- Simmer: Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Use tongs to remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
- Serve: Ladle warm chili into individual bowls and garnish with optional toppings. Enjoy!

'ALL DAY' CHILI IN LESS THAN 1 HOUR!
This is my main Chili recipe, it takes less than 1 hour to cook from 'start to devour'. So this is a GREAT weekday dinner, weekend lunch or an entertaining recipe. It will serve 6-8 so you can split it up and freeze half for another time, or serve it to friends like I did with homemade cornbread and red wine! Everyone went back for a second helping (of the Chili and wine ha ha).

Steps:
- chop the celery and onion and place it in pot with 1/2 stick of butter, black pepper, and garlic salt. Cook it down on medium high until the onions start to look clear.
- add the 1 1/2 cups of low sodium beef broth and 1 lb lean ground beef and bring pot to a medium boil. Allowing the beef to boil a couple minutes really breaks it down to a fine texture (with your help stirring).
- lower the temp to a simmer and add the cumin, nutmeg, paprika, red pepper flakes, chili powder, tomato sauce, and fire roasted diced tomatoes (with juice).
- drain and rinse the cans of beans and corn, then add them to the pot and stir well.
- add 3 milk chocolate Hershey Kisses and stir until they are completely melted (this adds a subtle, unique but delish flavor - plus it is now definitely made with love).
- cover and simmer on low for 15-30 minutes, stir on occasion.
- serve in bowl with the toppings of your choice and enjoy!

Steps:
- Coarse chop onions and sauté in 4 tbs olive oil until caramelized in a 6 quart cooking pot.
- While onions are cooking coarse chop peppers and celery and place in bowl.
- Remove onions from pot (leaving oil) to bowl with peppers/celery; set aside.
- Add 2 tbs olive oil to pot.
- Combine chili powder and flour in small bowl and once well blended add to oil in pot.
- Add 2 tbs Worcestershire sauce and stir until smooth.
- Add Beef and Sausage to pot and stir until combined and well coated with sauce.
- Continue cooking over medium heat until browned.
- Add both cans of tomatoes to meat in pot and bring to light boil over medium heat.
- Add beans, pepper/celery/onion mixture, garlic, and all seasonings to pot and stir.
- Cover and reduce heat to lowest setting.
- Cook over low heat for at least four hours or up to 8 hours.
- In final hour of cooking remove cover and increase heat slightly to reduce liquid.
- Once chili reaches desired consistency replace cover and reduce heat back to low.
- Serve with side bowls of sour cream and shredded cheese (cheddar, or a good mix) and crackers.

- In a large heavy skillet, heat the dried ancho and chipotle chiles on medium-high heat about a minute on each side. Turn off the heat, cover the chiles with water and soak them until rehydrated, about 30 minutes.
- Meanwhile, in a Dutch oven or other large pot over medium heat, heat 1 tablespoon vegetable oil or bacon fat. Add the onions and sauté until they start to brown, about 10 minutes. Add the garlic and cook for 30 more seconds. Transfer to a blender.
- Form the ground beef into balls the size of marbles. Return the Dutch oven to medium heat, add 1 tablespoon vegetable oil or bacon fat and, when it is hot, add the meatballs. Stir occasionally until lightly browned, about 10 minutes, then remove from the heat.
- Drain the chiles well, and remove and discard stems and seeds. Add the chiles to the blender. Add the canned chipotles, if using, pequin chiles or cayenne, cumin, oregano, cloves, cinnamon and 1 cup water. Blend until smooth. Add to the Dutch oven with the browned meatballs along with 4 cups water. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.
- Adjust salt and pepper to taste. If the chili looks too thin, slowly stir in the masa harina. Add the lime juice, and simmer for 15 minutes more. Serve topped with grated cheese, diced onions, pickled jalapeños and sour cream. Or serve as Frito pie: For each serving, mound 1 cup Fritos in a bowl and top with 1 cup chili, ¼ cup grated cheese, 1 tablespoon diced onions, sliced jalapeños and sour cream.
