ALL-BRAN WAFFLES SUPREME W/HOMEMADE JAM

ALL-BRAN WAFFLES SUPREME w/homemade jam image

These delicious All-Bran Waffles are a healthy alternative to ALL-BRAN muffins. I started making them in 1975, and still have the original recipe pamphlet from the Kellog Co. Instead of the usual butter and syrup on the top, I only use my homemade strawberry, rhubarb freezer jam. Naturally I freeze quite a few to enjoy at another time. I am sure your family will love this recipe and I do hope you will give it a try. Nancy.... 2013

PUMPKIN BRAN BREAD

Pumpkin Bran Bread image

Provided by Beth Harrison

Categories     Bread     Bake     Thanksgiving     High Fiber     Pumpkin     Fall     Winter     Bon Appétit     South Carolina

Yield Makes 2 loaves

Number Of Ingredients 13

3 cups all purpose flour
1 1/2 cups shredded bran cereal (such as All-Bran)
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/4 teaspoons ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon baking powder
4 eggs
3 cups sugar
1 cup buttermilk
2 cups canned solid pack pumpkin
2/3 cup vegetable oil

Steps:

  • Preheat oven to 325°F. Butter two 9x5x3-inch loaf pans. Dust pans with flour. Combine first 8 ingredients in medium bowl; stir to blend well. Whisk eggs, sugar and buttermilk in large bowl. Add dry ingredients; stir to combine. Add pumpkin and oil; stir until blended. Divide batter between prepared pans.
  • Bake until tester inserted into center of each loaf comes out clean, about 1 hour 20 minutes. Let loaves cool 10 minutes. Cut around pan sides to loosen loaves, if necessary. Turn out loaves onto racks; cool completely. (Can be made ahead. Wrap tightly and store at room temperature 1 day or freeze up to 1 month.)

Tips:

  • Use ripe bananas for the best flavor and texture.
  • Mash the bananas thoroughly to avoid large chunks in the bread.
  • Be sure to use quick-cooking oats; regular oats will not work well in this recipe.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Grease and flour the loaf pan before adding the batter to prevent sticking.
  • Bake the bread at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool completely before slicing and serving.

Conclusion:

All-Bran Jam Bread is a delicious and nutritious quick bread that is perfect for breakfast, lunch, or a snack. It is easy to make and can be customized with your favorite fruits and nuts. This bread is also a great way to use up ripe bananas. Next time you have a few ripe bananas on hand, be sure to give this recipe a try.
