4 slices hickory-smoked thick-cut bacon
1 ½ cups shredded mild Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a baking dish. Season with salt and pepper.
  • Bake chicken in the preheated oven until it is just slightly pink in the center, about 25 minutes. Remove from the oven.
  • Place bacon in a large skillet and cook over medium heat, turning occasionally, until most of the fat has rendered, about 5 minutes. Drain bacon slices on paper towels. Wrap around chicken breasts.
  • Return chicken to the oven and continue baking until an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C) and bacon is crispy, about 15 minutes more. Sprinkle Cheddar cheese on top; bake until melted, 2 to 5 minutes. Serve with limes.

1/2 cup Dijon mustard
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice

4 boneless skinless chicken breast halves
2 tablespoons olive oil
6 slices bacon, cooked until crispy and cut in half
2 cups button mushrooms
1 tablespoon butter
1 cup monterey jack cheese, grated
1 tablespoon fresh parsley, chopped

Steps:

  • Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours.
  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
  • Remove chicken from the marinade with tongs and place into hot skillet. Season each side with salt and pepper and cook until golden brown but not cooked through, working in batches as not to over-crowd the pan.
  • Place browned chicken on prepared baking sheet.
  • In the same skillet, add butter and melt over medium heat. Stir in mushrooms and a pinch of salt, and cook until tender and starting to brown. Remove from heat.
  • Divide and spoon mushrooms over the chicken breasts, followed by 2 slices of bacon, and the Monterrey jack cheese.

4 boneless skinless chicken breasts, 1/2 " thick
honey mustard
6 slices bacon, sliced in half
1/2 teaspoon McCormick's Season All
1 cup sliced mushrooms, drained
3 cups shredded colby or 3 cups monterey jack cheese

Steps:

  • Rub chicken breast with Seasonal All and set aside to marinate for 1 hour.
  • While the breast is marinating fry bacon crisp and drain.
  • Sauté chicken breasts on medium heat in pan with just enough oil to prevent sticking.
  • Cook on both sides until a slight golden color and cooked in the middle but not dry.
  • Remove from pan and place in a 9 x 13 dish.
  • Spread chicken breast with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded Colby/jack cheese, chicken should be covered with shredded cheese.
  • Bake at 350 degrees about 15 minutes or until cheese melts.
  • Sprinkle with parsley and extra honey mustard may be served on the side.

4 boneless chicken breasts, pounded to 1/2" thick
lowry's season salt
6 slice bacon
1/4 c mustard
1/3 c honey
2 Tbsp mayonnaise
2 tsp dried onion flakes
1 c mushrooms, fresh
2 c colby jack cheese

Steps:

  • 1. Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes
  • 2. While chicken is in the fridge, cook bacon in a large skillet until crisp. Remove bacon and se aside. **DO NOT DISCARD GREASE**
  • 3. Saute chicken in the bacon grease for 3-5 minutes per side, or until browned. Place chicken in a 9x13 casserole dish or pan.
  • 4. To make the honey mustard: In a small bowl, mix the mustard, honey, mayo and dried onion flakes. Spread some of the honey mustard over each piece of the chicken, top with crumbled bacon, and shredded cheese.
  • 5. Bake in a 350 degree oven for 30 minutes, or until cheese is melted and chicken is done.

1 cup mushroom
4 slices bacon
honey mustard dressing, for dipping

Steps:

  • Preheat oven to 350°.
  • On each piece of chicken, carefully layer the mushrooms first and then the bacon (position the bacon on the mushrooms so that it holds the mushrooms in place).
  • Cover and bake for 30-45 minutes or until chicken is cooked through.

1 cup Dijon mustard
1 cup honey
1 tablespoon canola oil
1 teaspoon lemon juice
4 -6 boneless skinless chicken breasts
1 tablespoon vegetable oil
2 cups sliced mushrooms
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
12 slices bacon, pre-cooked
3 cups shredded Mexican blend cheese

Steps:

  • With an electric mixer combine the mustard, honey, and 1 Tbsp oil, and lemon juice for 1 minute.
  • Pour 1/2 mixture over chicken in a gallon ziplock to marinate in fridge 2-24 hours.
  • Chill remaining marinade to serve with chicken.
  • After marinating chicken, Put remaining oil in frying pan. Sear chicken on both sides until cooked thru.
  • Transfer chicken to a pan and brush with marinade; keep warm.
  • Meanwhile in frying pan add butter and saute mushrooms. Remove from the heat.
  • Cut chicken into bite size pieces and line your ingredients up, this part will go quickly! Chicken, cheese, mushrooms and bacon.
  • If you have a quesadilla maker get it heated up, otherwise, heat a frying pan and to medium heat and spread a little butter or non stick spray on the bottom.
  • Prepare tortillas by spreading a little butter on the ousides.
  • Place a tortilla, butter side down and add chicken, mushrooms, bacon and then the cheese but DO NOT OVERFILL. Place the other tortilla on top, butter side up. Flip (carefully) once bottom side is golden and do the same to the remaining side.
  • Repeat until you are out of ingredients.
  • Use the remaining honey mustard for dipping.

ALICE'S BAKED CHICKEN BREAST

A dear friend of mine gave me this recipe many years ago. It is my husband's favorite meal and I always think of her when I make this meal. I call it Alice's Baked Chicken in her memory, even though I don't know where she got this wonderful recipe. I always serve this with a tossed salad and bread or rolls.

1 (8 ounce) package of shredded monterey jack cheese
1 (10 1/2 ounce) can cream of chicken soup or 1 (10 1/2 ounce) can cream of mushroom soup, undiluted
1 (8 ounce) package Pepperidge Farm Herb Stuffing
1 cup melted butter or 1 cup margarine

Steps:

  • Grease a 9" X 13" baking pan.
  • Lay chicken breast in the pan, combine cheese and soup mixture and spread over the top of the chicken.
  • Sprinkle the Pepperidge Farm Herb Stuffing on top and then pour the melted butter or margarine over the top.

12 ounces sour cream
¼ cup grated Parmesan cheese
⅓ cup white wine
¼ cup chicken broth
1 pinch salt
1 dash lemon pepper

Steps:

  • Simmer chicken breasts in water to cover until almost tender. Drain, and reserve broth.
  • In a microwave-safe dish, mix together sour cream, parmesan cheese, white wine, chicken broth, salt and lemon pepper.
  • Cut chicken into bite size pieces, and put in sauce mixture. Cover. Microwave on High for about 10 to 15 minutes, then on Low for another 5 minutes. Make sure it doesn't burn. When sauce starts to thicken and chicken is tender, it is done!

4 boneless skinless chicken breasts
1/4 cup Worcestershire sauce
8 slices bacon
2 tablespoons butter
1 1/2 cups sliced fresh mushrooms
1/4 cup chopped green onion
1 1/2 cups grated monterey jack cheese
16 ounces caesar salad dressing or 16 ounces other favorite salad dressing

Steps:

  • Place chicken in a glass dish or bowl.
  • Poke each breast with a fork several times.
  • Pour Worcestershire sauce over and turn to coat them well.
  • Cover dish or bowl and refrigerate for at least 1 hour.
  • Place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, and set aside.
  • Remove most of the fat from the skillet, but do not wipe it clean.
  • In same skillet used to cook bacon, melt the butter.
  • Add mushrooms and green onions, and saute for about 10 minutes, or until soft.
  • Remove from pan and set aside.
  • Preheat oven to broil.
  • Remove chicken from marinade and discard any remaining liquid.
  • Broil chicken breasts for about 5 minutes each side.
  • When the cooking of the chicken is almost complete, top each breast with 2 slices bacon and grated cheese.
  • Continue to broil until cheese has melted and remove from oven.
  • Serve with mushroom mixture and a variety of salad dressings for topping.

4 skinless chicken breasts
1/2 cup fat-free mayonnaise
1/2 cup honey
8 slices turkey bacon
salt
ground black pepper
2 tablespoons Grey Poupon Dijon Mustard
2 teaspoons white vinegar
1 tablespoon butter
2 cups shredded reduced-fat colby-monterey jack cheese
paprika
2 cups sliced mushrooms (10-12 mushrooms)
2 teaspoons minced fresh parsley

Steps:

  • Combine the marinade ingredients in a medium bowl. 2 cups water, 1 1/2 teaspoons salt, 1/2 teaspoon liquid smoke, 1/4 teaspoon ground black pepper, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, and 1/4 teaspoon paprika.
  • Add all 4 chicken breast to the marinade in a covered container or resealable plastic bag, and chill for 3 to 4 hours.
  • Combine the mayonnaise, honey, Dijon mustard, and vinegar in a small bowl. Stir well until smooth. Chill.
  • When chicken has marinated, preheat barbecue grill to high heat.
  • As barbecue preheats, prepare turkey bacon by frying it in a skillet over medium heat until done. Remove the bacon from the skillet to a plate lined with paper, which helps soak up the excess fat. The bacon can sit here until it is time to assemble the dish.
  • Spray a light coating of nonstick oil cooking spray over the surface of each chicken breast. Sprinkle both sides of each chicken breast with salt, pepper, and paprika, and then grill for 7 to 10 minutes on each side. Preheat oven to 375°F.
  • As chicken grills, prepare mushrooms by heating up a medium skillet over medium/high heat. Add 1 tablespoon of butter to the pan. When the butter has melted, add the mushrooms along with a little salt and pepper. saute the mushrooms for 10-15 minutes or until the become cooked through and light brown. If the mushrooms finish before the chicken, just turn the heat to the lowest setting until you are ready to assemble the dish.
  • When chicken is cooked, transfer the chicken breast fillets to a large baking dish. Slather the top surface of each breast with a generous portion of the honey mustard sauce. Stack two slices of bacon, crosswise, on top of each breast.
  • Quarter the mushrooms and stack a portion on top of the bacon on each chicken breast. Carefully pour about 1/2 cup of the Colby/Monterrey Jack cheese blend over each of the chicken breasts.
  • Bake chicken in the preheated oven for 7 to 12 minutes or until cheese is melted.
  • Sprinkle each with about 1/2 teaspoon of fresh minced parsley.
  • Serve with addition honey mustard sauce on the side.

12 slices cooked bacon ( i use turkey bacon )
3 cups shredded mexican blend cheese
2 teaspoons chopped fresh parsley

Steps:

  • 1. Directions Combine the mustard honey and 1 tablespoon of the oil along with the lemon juice and mix. Mix vigorously . Place the chicken in a 1 gallon Ziploc bag and pour half of the mixture on top. Refrigerate for 2 to 24 hours. Save and chill the remaining marinade to serve later with the chicken. After the chicken has marinated: Preheat your oven to 375°F. Place the remaining oil in a frying pan, heat and sear chicken on both sides. Put the chicken in an oven safe pan and brush liberally with the marinade. In the same frying pan and add the butter and sauté the mushrooms. Season chicken breasts with salt and pepper. Place bacon strips across each breast, spoon mushrooms on top, and then add approximately 1/3 to 1/2 of a cup of cheese on each backspace.
