Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 12

3/4 cup red quinoa
2 tablespoons white balsamic vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1 shallot, minced
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 orange bell pepper, finely diced
1 mango, cut into 1/4-inch dice
1/4 cup chopped fresh mint leaves

Steps:

  • Rinse the quinoa in a strainer several times with cold water. In a medium pot over medium-high heat, add 1 1/4 cups water and bring to a boil. Add the quinoa, cover, and turn off the heat. Allow the quinoa to steam until the water has been absorbed completely and the quinoa grains pop open, 10 to 15 minutes. Fluff with a fork. Set aside to cool.
  • In a large mixing bowl, add the vinegar, mustard, garlic, shallot, 2 teaspoons salt and 5 to 6 turns freshly ground black pepper. While pouring in a slow, steady stream, whisk in the olive oil until fully incorporated and lightly emulsified. Add the peppers, mango, mint and quinoa. Toss to combine well and serve.

Tips:

  • Use fresh, ripe mangoes for the best flavor. If your mangoes are not ripe, you can ripen them by placing them in a paper bag with an apple or banana for a few days.
  • To make the quinoa salad ahead of time, cook the quinoa and vegetables according to the recipe and let them cool completely. Then, combine all of the ingredients in a large bowl and refrigerate for up to 2 days. When you're ready to serve, bring the salad to room temperature for about 30 minutes.
  • If you don't have any fresh herbs on hand, you can use dried herbs instead. Just be sure to use half the amount of dried herbs as you would fresh.
  • This salad is also a great way to use up leftover chicken or fish. Just add the cooked chicken or fish to the salad along with the other ingredients.

Conclusion:

Ali Vincent's Mango Quinoa Salad is a delicious and healthy salad that's perfect for summer gatherings. It's easy to make and can be tailored to your own taste preferences. Whether you like it spicy or mild, this salad is sure to be a hit. So next time you're looking for a refreshing and flavorful salad, give this one a try.
