CREAMY ALFREDO SAUCE RECIPE

Creamy Alfredo Sauce Recipe image

This Alfredo sauce recipe is one of my favorites. Actually I think it's just about everyone's favorite pasta recipe. For a special treat you can't beat cream, cheese and pasta together!

Provided by Karen Ciancio

Categories     Sauce

Time 25m

Number Of Ingredients 8

2 cups cream (heavy, or 35% cream is best)
1/4 cup butter (cold)
1/4 cup Parmesan cheese (grated)
salt and pepper (ideally white pepper)
pasta (fettucini, penne or tortellini are great, or use a non-wheat pasta for a gluten free recipe)
fresh parsley (chopped for garnish)
1 clove garlic (chopped (optional))
extra parmesan cheese

Steps:

  • Heat a large saucepan over high heat until very hot. Add just enough cold water to cover the bottom of the pan. Let the water evaporate (it will do this quickly) but make sure there are a few drops left in the pan. This will keep the cream from scorching and burning on the bottom of the pan. Remove the pan from the heat.
  • Add the cream to the pan and return it to the heat. When the cream comes to a boil, reduce heat to medium/ medium high and continue to boil until it is reduced by half. During that time, add the garlic.
  • In the meantime, cook pasta in well salted water according to package directions. Drain well when cooked.
  • When the cream is reduced remove it from the heat. Add butter 1 tablespoon at a time and whisk it in. The cream should thicken and turn glossy. Add the cheese and hot pasta to the cream. Season with salt and pepper and garnish with chopped fresh parsley. Serve immediately (with added parmesan cheese for me!).

NO-CREAM ALFREDO SAUCE

No-Cream Alfredo Sauce image

Traditional Roman fettucine Alfredo doesn't contain a drop of cream or milk, so whether you have none in your refrigerator or you are a traditionalist, this is the recipe for you. Just because there's no cream, however, doesn't mean it isn't over the top with richness and flavor.

Provided by Food Network Kitchen

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 5

Kosher salt
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small cubes
6 ounces Parmesan, freshly grated (about 2 cups)
1 pound dried fettuccine
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to boil. Put the butter and cheese in a large bowl and set aside.
  • Add the fettuccine to the boiling water and cook, stirring occasionally, according to the package instructions for al dente. Reserve 1 cup of the pasta water, then drain the pasta and add it to the large bowl. Using tongs, gently toss the pasta with the butter and cheese, adding pasta water as necessary to create a creamy looking sauce. Top with a few grinds of pepper.

Tips for a Perfect Alfredo Sauce:

  • Use high-quality ingredients: Freshly grated Parmesan cheese, real butter, and heavy cream will make a world of difference in the flavor of your sauce.
  • Don't overcrowd the pan: When cooking the chicken, make sure to not overcrowd the pan. This will prevent the chicken from cooking evenly and will result in a watery sauce.
  • Cook the chicken thoroughly: Make sure to cook the chicken all the way through before adding it to the sauce. This will help to prevent the sauce from becoming contaminated with bacteria.
  • Don't overcook the sauce: The sauce should be cooked until it is slightly thickened and creamy. Overcooking the sauce will cause it to become thick and gloopy.
  • Serve immediately: Alfredo sauce is best served immediately after it is made. This will help to prevent the sauce from becoming too thick or clumpy.

Conclusion:

Alfredo sauce is a delicious and versatile sauce that can be used on a variety of dishes. It is relatively easy to make, but there are a few tips that you can follow to ensure that your sauce turns out perfect every time. With a little practice, you'll be able to make a creamy, flavorful Alfredo sauce that your family and friends will love.
