QUICK CRAB ALFREDO
I use canned soup and sour cream to hurry along a rich sauce that coats imitation crab. When spooned over penne pasta and garnished with grated Parmesan cheese and minced fresh parsley, it's an easy entree that looks and tastes elegant.-Susan Anstine, York, Pennsylvania

ALFREDO CRAB DIP
CAUTION: YOU MIGHT EAT THIS ENTIRE DISH BY YOURSELF! It is the creamiest, cheesiest crab artichoke dip I have ever made. You can cheat and buy the Alfredo sauce from your favorite Italian restaurant. I buy mine from Olive Garden most of the time, or if you prefer, you can make it from scratch from your favorite alfredo recipe. Great with salted tortilla chips! Enjoy!

CRAB ALFREDO
Simply put, delicious! A little on the decadent side, but it can be made with fat-free half-and-half and a heart-healthy spread instead of butter. Serve with garlic bread sticks, a nice salad, and a glass of Chardonnay.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Keep warm and covered.
- Meanwhile, melt the butter in a large saucepan over medium heat. Add the minced garlic and cook until garlic releases its aroma, about 2 minutes, being careful not to let the garlic brown. Stir in the flour, salt, pepper, and cayenne pepper. Reduce heat, and cook, stirring constantly for about 2 minutes. Add the half-and-half and stir over medium heat until slightly thickened, about 3 minutes.
- Add the cream cheese and Parmesan cheese to the sauce and stir until cheeses melt and mixture is smooth. Mix in the crabmeat and continue cooking until crabmeat is heated through, about 3 minutes.
- Divide the fettucine between 2 plates or bowls and top with the crab sauce.

Tips:
- Use fresh crab meat. Fresh crab meat has a sweeter, more delicate flavor than canned crab meat. If you can't find fresh crab meat, use frozen crab meat that has been thawed in the refrigerator overnight.
- Shred the crab meat finely. This will help it to distribute evenly throughout the dip.
- Use a good quality Alfredo sauce. A good Alfredo sauce will be thick and creamy, with a rich, cheesy flavor. You can use a store-bought Alfredo sauce or make your own.
- Don't overcook the dip. The dip should be cooked just until it is heated through. Overcooking will make the dip tough and rubbery.
- Serve the dip immediately. Alfredo crab dip is best served hot, right out of the oven. You can garnish the dip with fresh parsley or chives.
Conclusion:
Alfredo crab dip is a delicious and versatile appetizer that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you like crab, cheese, or Alfredo sauce this dip is sure to be a hit. So next time you are looking for a crowd-pleasing appetizer, give Alfredo crab dip a try. You won't be disappointed!
