I love this unusual gingerbread recipe and have always gotten great reviews. I got the recipes years ago from a cookbook that Benson & Hedges put out. (I haven't smoked since 1986 so you can tell that I have had this for a long time.)

BLUEBERRY GINGERBREAD

Great tasting and a definite twist for gingerbread! Not overpowering. When storing, do not cover tightly, the top will become very moist instead of nice and crunchy. Serve plain or with a generous dollop of whipped cream.

ALASKAN SOURDOUGH CORNBREAD

Alaskan Sourdough Cornbread image

After our recent trip to Alaska, I have a renewed interest in sourdough baking. I found this recipe at Alaska Travel Magazine.Com. DH loves cornbread and this is a great recipe. It is a little different than traditional cornbread with a mild sour flavor. I updated the cooking time after 16Paws review and my preparing the recipe again and watching the time closely. Be cautious when adding the milk due to differences in starter with regards to "wetness".

Categories     Quick Breads

Time 1h25m

Yield 8 serving(s)

Number Of Ingredients 9

1 1/2 cups cornmeal
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1 cup milk
1 1/2 cups sourdough starter
1 1/2 teaspoons cream of tartar
1 1/2 teaspoons baking soda
2 eggs, slightly beaten
6 tablespoons butter, melted

Steps:

  • Spray a well seasoned, 9 or 10 inch iron skillet with non-stick cooking spray, add a small amount of oil and place in oven while it preheats.
  • Preheat oven to 425 degrees.
  • Combine the cornmeal, sugar and salt in medium bowl.
  • Scald milk and pour over cornmeal mixture.
  • When mixture is room temperature, add remaining ingredients and mix well.
  • Pour mixture into prepared pan and bake for 20 to 30 minutes or until golden brown.

Tips:

  • Begin by combining warm milk, water, yeast, and sugar in a large bowl. Set it aside for 5-10 minutes, or until the yeast is foamy.
  • In a separate bowl, whisk together flour, salt, ginger, cinnamon, nutmeg, and allspice. Add the wet ingredients to the dry ingredients and stir until just combined.
  • Cover the dough with plastic wrap and let it rise in a warm place for 1 hour, or until doubled in size.
  • Grease and flour a 9x13 inch baking dish. Pour the batter into the prepared pan and sprinkle the blueberries on top.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the gingerbread cool for 10 minutes before serving.

Conclusion:

This Alaskan Sourdough Blueberry Gingerbread is a delicious and unique twist on a classic recipe. The sourdough starter adds a tangy flavor that pairs perfectly with the sweetness of the blueberries and the warmth of the ginger. This bread is perfect for a winter breakfast or snack, and it also makes a great gift.
