Time 12h40m

Number Of Ingredients 8

2 1/2 cups all-purpose flour
8 tablespoons unsalted butter (cold)
1/2 cup sourdough starter discard
1 cup buttermilk (or milk)
1 tablespoon sugar (optional)
1 teaspoon fine sea salt
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Grate the butter using a cheese grater, into a large mixing bowl. Add the flour and use a bench scraper or a fork to cut the butter into the flour until it forms small, pea-sized crumbles. Add the sourdough starter discard, buttermilk and sugar and stir with a stiff spatula until fully combined. Cover the bowl and let rise on the counter for 10-12 hours.
  • Preheat your oven to 400°F (204°C). Combine the salt, baking soda and baking powder in a small bowl and use a fork to combine, making sure there are no lumps. Sprinkle half of the mixture over the dough and work it into the dough with your hands. Sprinkle the second half and continue to work it into the dough until fully combined.
  • Generously flour your work surface and turn the dough out onto it. Flour the top of the dough and use your hands to press it into a rectangle shape that is 1 inch in thickness. Use a biscuit cutter to cut out biscuits, pressing straight down and pulling straight up. *See notes.
  • Arrange the biscuits in a 12" cast iron skillet and bake for 25-30 minutes, or until the tops are golden brown. Remove and serve warm.

Tips

  • When measuring your flour, be sure to use a kitchen scale for the most accurate results. This will help ensure that your biscuits are light and fluffy.
  • If you don't have a kitchen scale, you can use the scoop and level method. To do this, spoon the flour into a measuring cup and level it off with a knife.
  • Be sure to use cold butter for your biscuits. This will help them to stay flaky and tender.
  • When cutting in the butter, use a pastry cutter or two forks. This will help to create small pieces of butter that will melt and create steam in the oven, resulting in light and fluffy biscuits.
  • Don't overmix the dough. Overmixing will make your biscuits tough.
  • When shaping the biscuits, be sure to handle them gently. Over-handling will also make them tough.
  • Bake the biscuits in a hot oven. This will help them to rise quickly and evenly.
  • When the biscuits are done baking, remove them from the oven and let them cool for a few minutes before serving. This will help them to firm up and set.

Conclusion

Sourdough biscuits are a delicious and easy-to-make breakfast or snack. They are perfect for any occasion, and they can be enjoyed by people of all ages. If you're looking for a new and exciting way to enjoy sourdough starter, give these biscuits a try. You won't be disappointed!
