PIQUE (PUERTO RICAN HOT SAUCE)

Pique (Puerto Rican Hot Sauce) image

This recipe is for hot sauce! Hot but flavorful. The consistency isn't a thin liquid like Tabasco®. It's a little on the thick side so it doesn't disappear when you put it on your food. Great with everything on your plate...that is, if you love it hot and spicy! This keeps in the refrigerator for several weeks.

Yield Makes about 2 1/4 cups

Number Of Ingredients 11

12 Caribbean sweet peppers (ajíes dulces)
1 cubanelle pepper, seeded and coarsely chopped
1/2 Scotch Bonnet or habanero chile, seeded
7 garlic cloves, peeled
1 small yellow onion (about 5 ounces), coarsely chopped (about 1 cup)
1 cup extra-virgin olive oil
1/3 cup distilled white vinegar
1 bunch cilantro, leaves stripped from stems (about 2 cups)
1 1/4 teaspoons salt, or to taste
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin

Steps:

  • Combine all the ingredients in a food processor or blender and process to a coarse emerald-green sauce. The sauce will keep in the refrigerator, tightly covered, for 2 to 3 days.

Tips:

  • Choose ripe peppers: Look for peppers that are deep red or orange in color and have a slightly sweet aroma. Avoid peppers that are green or have blemishes.
  • Remove the seeds and ribs: Cut the peppers in half lengthwise and use a spoon to scrape out the seeds and ribs. This will help to reduce the bitterness of the peppers.
  • Roast the peppers: Roasting the peppers will help to bring out their natural sweetness and flavor. You can roast the peppers in the oven or on a grill.
  • Puree the peppers: Once the peppers are roasted, puree them in a food processor or blender until smooth. You can add a little water or oil to help the peppers puree more easily.
  • Use the pepper puree in a variety of dishes: Aji dulce pepper puree can be used in a variety of dishes, including soups, stews, sauces, marinades, and dressings. It can also be used as a condiment.
