1 Tablespoon Oil ((I used my Air fryer oil spray))

Steps:

  • Warm tortillas in the microwave for about 8 seconds if already at room temp or up to 15 seconds if it was in the refrigerator.
  • Brush or spray the warm tortillas with oil on both sides.
  • Drape tortillas over store bought air fryer taco mold or homemade foil abs rack method.
  • Air fry at 400°F / 204°C for 5 to 6 mins
  • Let it cool completely before filling with all the taco goodies.

To keep them vegan, we serve them with lettuce, tomatoes, onions, Mexican hot tomato sauce (such as El Pato®) and vegan Cheddar shreds (such as Follow Your Heart®).

1 large russet potato, peeled
1 teaspoon plant-based butter (such as Country Crock®)
2 tablespoons diced onion
1 clove garlic, minced
¼ cup plant-based butter (such as Country Crock®)
2 tablespoons unsweetened plain almond milk
salt and ground black pepper to taste
6 (6 inch) corn tortillas
avocado oil cooking spray

Steps:

  • Place potato into a saucepan and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  • While potato is boiling, melt 1 teaspoon plant-based butter in a skillet and saute onion until soft and translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Set aside.
  • Drain potato and transfer to a bowl. Add 1/4 cup plant-based butter and almond milk, season with salt and pepper, and mash. Mix in onion and garlic until well combined.
  • Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of potato mixture down one side of each tortilla; fold over.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place tacos in the air fryer basket, making sure they are not touching, and mist with avocado oil. Cook in batches if necessary.

4 (4 inch) street taco corn tortillas (such as Mission®)

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place a mini muffin tin pan upside down the air fryer basket. Position tortillas in the indents of the muffin tin. Place the basket on the lowest rack of the air fryer oven.
  • Air fry until golden brown and crispy, about 3 minutes. Remove tortillas from mini muffin tin pan and place upside down in the basket. Air fry until bottom side is crispy and golden brown, 1 minute more.

1 large onion, chopped
2/3 cup shredded cheddar cheese
1/3 cup salsa
3 tablespoons canned chopped green chiles
1/4 teaspoon garlic powder
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
1/8 teaspoon ground cumin
1 tube (8 ounces) refrigerated crescent rolls
Optional: Shredded lettuce, sliced ripe olives, chopped tomatoes and sliced seeded jalapeno pepper

Steps:

  • Preheat air fryer to 300°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble meat; drain. Stir in cheese, salsa, chiles, garlic powder, hot pepper sauce, salt and cumin. , Unroll crescent roll dough and separate into 4 rectangles; press perforations to seal. Place 1/2 cup meat mixture in the center of each rectangle. Bring 4 corners to the center and twist; pinch to seal. In batches, place in a single layer on greased tray in air-fryer basket. 6 Homemade Taco Shells or Store bought.
1 lb ground beef
1 medium onion
3 Tablespoons Taco seasoning
1 cup Tomato sauce
1 cup Pico de Gallo
1 Cup Avocado slices or cubes
1 cup shredded cheddar cheese

Steps:

  • Sauté onions in olive oil, till soft and fragrant
  • Add the ground beef, break up ground beef to small bits and cook till browned and no longer pink
  • Drains some of the fat off the skillet if any. Then add the taco seasoning and tomato sauce. Turn heat down to a simmer and cook for up to 5 mins.
  • Taste for seasoning and adjust accordingly. Turn off heat and set aside
  • Scoop taco meat onto the Taco shells
  • Scoop on some Pico de Gallo, then top it off with some shredded cheddar cheese.
  • The warm taco meat should melt the cheese slightly. However if it doesn't, place the tacos in the air fryer basket and air fry at 330°F / 165°C for about a minute to melt the cheese
