1 ½ cups all purpose flour
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/3 cup applesauce
1/2 cup plain yogurt
2/3 cup honey
2 tsp vanilla extract
1 egg
1 cup carrots, shredded
1 cup apples, shredded
1/2 cup raisins
1/2 cup pecans

Steps:

  • In a large bowl combine the flour, baking powder salt, cinnamon, nutmeg, and ginger.
  • Make a hole in the center and add the applesauce, yogurt, honey, vanilla extract and egg. Mix into the dry ingredients until just combined, being careful not to over mix.
  • Fold in the carrots, apples, raisins and half of the pecans. The batter will be very thick.
  • Scoop into silicone muffin cups filling nearly to the top. Sprinkle with remaining pecans.

1/3 cup shortening
1 cup sugar
2 eggs, lightly beaten

  • Combine flour and baking powder; set aside. In a large bowl, cream shortening and sugar. Add eggs; mix well. Combine milk and vanilla; add to creamed mixture alternately with flour mixture.
