½ (4 ounce) package crumbled feta cheese
4 medium russet potatoes, peeled and cut into fries
2 teaspoons olive oil
2 teaspoons Greek seasoning (such as Cavender's®)

1 small red onion, cut into thin strips
¼ cup sliced Kalamata olives
12 grape tomatoes, halved

Steps:

  • Place shredded cucumber in a colander and sprinkle with salt. Let drain for 10 minutes.
