AIR FRYER RICE PAPER CHICKEN ROLL-UPS

Air Fryer Rice Paper Chicken Roll-Ups image

With rice paper wrappers, you can wrap chicken tenders and air fry them for a "fried" experience without the mess of deep frying. Simply soak a rice paper wrapper for few seconds, roll up a chicken tender in it and then let it cook in an air fryer until it's super crispy and crunchy. Try this method with your favorite protein for a quick weeknight meal or appetizer.

Time 45m

Yield 2 servings (about 12 rolls)

Number Of Ingredients 8

2 boneless skinless chicken breasts (6 ounces each)
Kosher salt and freshly ground black pepper
Nonstick cooking spray
12 (8 1/2 inch) round rice paper wrappers
1 scallion (green part only), thinly sliced
2 tablespoons cilantro leaves
1/4 small fresno chile, thinly sliced
Sweet Thai chili sauce, for serving

Steps:

  • Spray a baking sheet with cooking spray and set aside.
  • Pat the chicken breasts dry between paper towels, then cut each breast into 6 equal tenders, about 1 ounce each. Season with a pinch of salt and a few grinds of black pepper.
  • Soak 1 rice paper wrapper in a large shallow bowl of warm water until pliable, about 15 seconds, then lay on a cutting board. Arrange 1 chicken tender lengthwise across the middle of the wrapper. Fold the bottom of the wrapper over the chicken, then fold in the sides and roll up into a tight log. Place the roll-up on the prepared baking sheet and repeat with the remaining wrappers and chicken tenders.
  • Preheat the air fryer to 400 degrees F. Spray the air fryer basket with cooking spray. Working in batches, place the roll-ups in a single layer in the basket, spacing them apart, then spray with them with cooking spray. Cook, flipping halfway through, until the roll-ups are golden brown and the chicken is cooked through, about 15 minutes.
  • Garnish the roll-ups with the scallions, cilantro, and chiles and serve with sweet Thai chili sauce.

AIR FRYER FRIED CHICKEN

Air Fryer Fried Chicken image

Making fried chicken in an air fryer is a revelation. You can achieve a crispy crust and juicy interior without all the steps of deep-frying. A soak in seasoned buttermilk adds extra flavor-as little as 1 hour will make a difference, but overnight is even better. Because of the capacity of a standard air fryer, we cook the chicken in batches. You can rewarm the first batch in a 250-degree oven for 10 minutes if you'd like to serve it all hot at once.

Time 3h15m

Yield 4 to 6 servings

Number Of Ingredients 10

3 cups buttermilk
6 garlic cloves, crushed and peeled
Kosher salt and freshly ground black pepper
6 bone-in, skin-on chicken thighs (about 2 pounds)
6 chicken drumsticks (about 2 pounds)
2 cups all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Olive oil cooking spray

Steps:

  • Combine the buttermilk, garlic, 1 tablespoon salt and 2 teaspoons pepper in a large resealable plastic bag or container. Add the chicken pieces, seal and refrigerate at least 1 hour and up to overnight, turning the bag once or twice.
  • When you are ready to cook the chicken, combine the flour, paprika, garlic powder, onion powder, 1 tablespoon salt and 1 teaspoon pepper in a shallow bowl or dish. Stir well with a fork to combine. Drizzle 2 to 3 tablespoons of the buttermilk mixture from the bag over the flour and toss well to create small lumps throughout.
  • Remove the chicken from the marinade. Spray the basket of a 3.5-quart air fryer with olive oil cooking spray and preheat to 360 degrees F.
  • Dredge 3 thighs and 3 drumsticks in the flour mixture, shaking off the excess. Place the pieces in the preheated air-fryer basket, skin-side up without touching. Spray the chicken generously with the cooking spray and air fry until the chicken is cooked through and the crust is crisp and deep golden, about 27 minutes. Check on the chicken halfway through to spray any spots that still look floury with more cooking spray and flip the drumsticks only.
  • When the chicken is done, remove it from the air fryer and season lightly with salt. Repeat the dredging and air-frying process with the remaining chicken. if you like, rewarm the first batch in an oven at 250 degrees F for 10 minutes before serving.

Tips:

  • Use day-old rice: Day-old rice is less sticky and clumps less, making it ideal for fried rice.
  • Cook the rice properly: Make sure the rice is cooked through but not overcooked. Overcooked rice will become mushy and sticky.
  • Use a large air fryer: A large air fryer will allow you to cook the rice and other ingredients in one batch. This will save you time and effort.
  • Preheat the air fryer: Preheat the air fryer to the desired temperature before adding the ingredients. This will help the rice cook evenly.
  • Use a light coating of oil: A light coating of oil will help the rice and other ingredients cook evenly and prevent them from sticking to the air fryer basket.
  • Stir the rice frequently: Stir the rice frequently during cooking to ensure that it cooks evenly and does not burn.
  • Add the eggs towards the end of cooking: Adding the eggs towards the end of cooking will prevent them from overcooking and becoming rubbery.
  • Season to taste: Season the fried rice with salt, pepper, and other seasonings to taste.

Conclusion:

Air fryer chicken fried rice is a quick and easy weeknight meal that is sure to please everyone in the family. It is a great way to use up leftover rice and chicken, and it can be customized to your liking. With just a few simple ingredients and steps, you can have a delicious and healthy meal on the table in no time.
