Everyone loves Air Fryer Corn Fritters! Today, I made cheesy corn fritters filled with corn and loaded with cheddar cheese. They were air-fried, and they were absolutely delicious.

Number Of Ingredients 9

1 cup all-purpose flour
¼ cup plain breadcrumbs
½ cup shredded cheddar cheese
1 ½ cup thawed corn kernels. You can use canned corn as well
½ teaspoon garlic powder
¼ teaspoon ground black pepper
½ teaspoon salt
2 eggs
3 tablespoons sour cream

Steps:

  • N a large bowl, combine flour, breadcrumbs, garlic powder, ground black pepper, and salt. Mix until combined.
  • Add in the cheese and the corn kernels until all coated with flour/breadcrumbs mixture, mix until all is combined, and finally add in the corn kernels.
  • Next, add in the eggs and sour cream. Mix until all is combined. The dough will be very sticky. You can use a fork, or I use my dough hook.
  • Use a cookie scoop (I like using OXO medium size scoop 1 ½ tablespoon) and scoop up some corn fritter mixtures into a ball. You should have seven corn fritter balls. Use your hand and flatten out each dough to a small but thick pancake.
  • Place four corn fritters in the prepared air fryer basket and cook for 7 minutes at 370 degrees F on a manual setting. Flip them and cook for an additional 6 to 7 minutes or until golden. You should have only two batches to do.
  • Repeat this process until there are no more corn fritters. Once the corn fritters are cooked, place them on a cooling rack and cool off for 5 minutes.
  • Plate, serve and enjoy!

1 cup corn stripped off the cob
1/2 cup shredded cheddar cheese
1/4 cup panko breadcrumbs
1 tbsp flour
1 egg
3 green onions (diced)
1 tbsp mayonnaise, sour cream, or greek yogurt
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Steps:

  • Preheat air fryer to 375 degrees.
  • Mix together all fritter ingredients in a mixing bowl. Make sure it is well combined but don't overmix. If the mixture is too dry, add additional mayonnaise or sour cream. If it is too wet, add a little bit of flour at a time. You should have a sticky consistency.
  • Using either a tablespoon or a cookie scoop to form tablespoon sized balls of mixture. Flatten with the palm of your hand into a disc. Place in hot air fryer and cook for 8 minutes, flipping at the 4 minute mark.

¼ teaspoon garlic powder
1 medium shallot, grated
1 medium fresh jalapeno pepper, grated
½ cup fine bread crumbs, or as needed
1 tablespoon olive oil, or as needed

Steps:

  • Grate zucchini using the large teeth of a grater. Toss zucchini and salt together in a large colander and place in the sink to drain for 10 minutes.
  • Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
  • Mix Parmigiano-Reggiano cheese, egg, 3 tablespoons bread crumbs, pepper, and garlic powder together in a large bowl. Stir in zucchini, shallot, and jalapeno until combined.

  • Place about 1/2 cup bread crumbs into a shallow plate or pie dish. Divide fritter batter into 7 portions. With oiled hands, gently roll each portion into balls. The batter will be very wet. Gently roll in the bread crumbs to cover on all sides. Continue with the rest of the batter. Pat the fritters slightly so excess bread crumbs fall off.
  • Air fry fritters in 2 batches until browned, about 15 minutes per batch.

  • Place 2/4 cup of sweet corn into a blender with the all-purpose flour, eggs, and shredded Parmesan cheese.
