⅛ teaspoon smoked paprika
2 tablespoons crumbled feta cheese
1 tablespoon chopped fresh parsley
½ teaspoon lemon zest

  • Sprinkle cut sides of eggplant with salt. Let stand for 20 to 30 minutes. Blot dry with paper towels.
