1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup mayonnaise
2 tablespoons chopped pickled jalapenos
2 tablespoons whole grain mustard
1 tablespoon ketchup
1 tablespoon hot sauce
1 scallion, thinly sliced

Steps:

  • For the fried shrimp: Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple paper towels, then season with a pinch of salt and a few grinds of black pepper.

1 tsp chipotle chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder

1 cup fresh avocado (sliced)
1 cup purple cabbage (chopped)
1/2 cup green salsa
1/2 cup sour cream
1/2 cup red onion (finely chopped)

12 street sized flour tortillas

Steps:

  • Thaw the shrimp according to package directions. I used the quick thaw method, which is just rinsing the frozen shrimp under cold water.
