MY MOM'S CRISPY SUGAR COOKIES

My Mom's Crispy Sugar Cookies image

These are the sugar cookies my mom used to make when I was little... I admit it's been decades since I've had them, but I found the recipe in her old tin box so I thought I'd share it. I don't think there's anything remarkably special in this recipe, but honestly they are the best sugar cookies I've had! I've tried numerous...

Categories     Cookies

Number Of Ingredients 7

3/4 c shortening
2 c sugar
2 eggs
1/4 milk
1 tsp vanilla extract
4 c flour
3 tsp baking powder

Steps:

  • 1. Beat the shortening and sugar together until very light and fluffy. Beat the eggs in one at a time, then add the milk and vanilla.
  • 2. Sift together the flour and baking powder. Turn your mixer on low and add the flour mixture a cup at a time to the shortening/sugar mixture, mixing only until just incorporated. Dough will be very stiff. Chill the dough several hours, or even overnight.
  • 3. There are two ways to finish these cookies. You can roll out portions of the dough (keep remaining dough chilled), use cookie cutters to cut out desired shapes, place on parchment lined baking sheets and bake at 325 until they just start to brown at the edges. Cool slightly, then remove to a rack to finish cooling. You can also just make balls out of the dough, then flatten them with a glass dipped in sugar. You will need to flatten them a LOT, they need to be pretty thin, maybe 1/4 inch. Sprinkle the cookies with regular or colored sugar before baking, if desired.

ANNE'S BASIC SUGAR COOKIES

Anne's Basic Sugar Cookies image

A quick sugar cookie recipe is a lifesaver during the holidays... or on any day. And this method is so simple, I'm a little embarrassed to call it a recipe. It's what you do with it that counts. Roll and cut into your favorite shapes. Or roll balls in coarse sugar before baking. Form the dough into a log, then slice and bake. Turn them into snickerdoodles by adding cinnamon to the sugar. Or give these cookies a completely new look by folding in sprinkles before baking. The possibilities are limitless! Store, lightly covered, at room temperature, for 1 week.

1 (15.25 ounce) package yellow cake mix
6 tablespoons unsalted butter, melted and cooled to room temperature
1 large egg
1 teaspoon vanilla extract
½ teaspoon almond extract
1 large egg white
sugar sprinkles for decorating

Steps:

  • Place a rack in the center of the oven and preheat to 375 degrees F (190 degrees C).
  • Combine cake mix, butter, egg, vanilla, and almond extract in a large mixing bowl. Beat with an electric mixer on low speed for 30 seconds. • Roll the dough to 1/4- to 1/2-inch thickness on a lightly floured board with a lightly floured rolling pin. Use cookie cutters to stamp out shapes and place them 2 inches apart on ungreased cookie sheets. (You can reroll the dough scraps once and cut out more cookies.) Brush the cookies with egg white and decorate with sprinkles.
  • Place one pan in the oven at a time. Bake until the edges of the cookies are golden brown, 8 to 10 minutes for smaller cookies and 10 to 12 minutes for larger. Let the cookies rest on the cookie sheet for 1 minute, then remove to wire racks with a metal spatula to cool completely, about 20 minutes.

Tips:

  • For the best results, use high-quality ingredients. This means using real butter, not margarine, and using pure vanilla extract, not imitation.
  • Make sure your butter and eggs are at room temperature before you start baking. This will help the ingredients to blend together more easily and will result in a smoother cookie dough.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and will prevent them from spreading too much in the oven.
  • Bake the cookies in a preheated oven. This will help to ensure that the cookies bake evenly.
  • Don't overbake the cookies. Overbaking will make the cookies dry and crumbly. Bake the cookies just until they are set around the edges and the bottoms are just beginning to brown.
  • Let the cookies cool completely before frosting or decorating them.

Conclusion:

Agnes' Sugar Cookies are a delicious and classic cookie that is perfect for any occasion. They are thin, crispy, and have a delicate flavor. With a few simple tips, you can easily make these cookies at home. These cookies are a great way to use up leftover egg whites. They are also a great cookie to make with kids.
